Nothing says summer like when Big Boy restaurant advertises that they are now serving their famous Strawberry Pie. Well, now you don’t have to wait for summer to have strawberry pie.
This strawberry pie is a no-bake type of pie. It is made with fresh strawberries and jello in a shortbread pie crust. And piled high with whipped cream.
Strawberry Pie Filling
To start the pie filling let’s start with cleaning and cutting the strawberries.
I find it’s easier to fill my kitchen sink with cold water and place the strawberries in there. Making sure to stir the berries around the water a few times. If the berries look like they aren’t getting very clean you can always drain the water and run more cold water over them.
After the berries are cleaned you will need to cut the steams off and then slice the berries. I’ll slice the berries in half then make thin slices of the halves.
You will need two cups of berries for this recipe. I like to have my measuring cup out to fill as I cut. I’ll place the two cups of berries in a bowl and set aside for later.
The next step to the filling is the jello part.
Making the jello for the filling
This is a no bake type of pie but it does require you to use the stove for the jello part.
In a medium-sized saucepan combine a package of strawberry jello, sugar, and cornstarch. I’ll take a whisk and mix this all together.
Adding to the jello mixture lemon juice and water, stirring to incorporate all the ingredients.
Turn your burner on medium-high heat, continue to stir the mixture. When the mixture comes to a full boil you will need to continue to stir so the jello doesn’t burn or boil over.
You will need to have this at a full boil for 5 minutes. As it boils it will start to get thick and deeper in red color. Please be careful when it’s boiling it will bubble up and can burn you. I speak from experience on this.
Once the jello mixture has boiled for 5 minute you can fold the fresh strawberries in.
Let’s talk about the crust and the different option there are. Now you can make a pie crust from scratch like the one that’s here on the blog. Or you can use a ready -made graham cracker crust. Our favorite to use is a ready-made shortbread crust. The choice is up to you, in the pictures I did use the shortbread crust.
With the strawberries added to the jello mixture now is the time to add the filling into the pie crust. Just pour it all in, you should have enough room for that cool whip to go on top.
You can add more strawberries if you like. I have found that 2 cups is the perfect amount for when I use the shortbread crust.
Place the pie in the refrigerator for 1 hour to set up. The jello will no longer be a liquid is how you will know that it’s set up.
A tip I have for transporting the pie to the refrigerator. Is I place the pie shell on a cookie sheet before I add the filling.
Now that the filling had time to set up it’s time to add the finishing touches to your strawberry pie.
Using a tub of cool whip, place all of it on top of the filling. Spread the cool whip to cover the whole pie. Garnish with sliced fresh strawberries if you like and enjoy.
Each year during the strawberry season the kids and I will go pick a few pounds of berries. This strawberry pie is always one of the first recipes I make out of those fresh berries.

Fresh Strawberry Pie
Big Boy style old fashioned strawberry pie that is made with jello and topped with cool whip. #mycreativemanner
- 1 Pie Crust Shortbread ready made pie crust is what is in the pictures to this recipe.
- 2 Cups Fresh Strawberries
- 1 Cup Sugar
- 1/4 Cup Cornstarch
- 1 .30 Ounce Strawberry Jello Packet
- 1 Teaspoon Lemon Juice
- 1 1/2 Cups Cold Water
- 8 Ounces Cool Whip Make sure this is thawed.
- Sliced Berries to garnish optional
Wash the strawberries in cold water.
Remove steams from strawberries and cut the berries into thin slices. Placed measure berries into a bowl and set aside.
In a medium sized saucepan add sugar, Cornstarch, and jello. Whisk these ingredients together.
To the jello mixture add the lemon juice and water. Stir to incorporate all the ingredients together.
Stirring all the while and bring to a full boil.
Continue to boil at full boil for 5 minutes. A continuous stir is needed so the jello doesn't burn. The jello mixture will become thick and darker in color when it's ready.
Once the jello has boiled for 5 minutes fold in the fresh strawberries.
Place in the refrigerator for one hour to set up. The jello will no longer be liquid when it's set.
Top with cool whip and sliced berries. Serve and enjoy.
Pie must be refrigerated is not ate all at once. Enjoy!
