Tangy Greek Cucumber Salad with feta cheese, red onion, fresh parsley, tomato, and cucumbers. All tossed in a Greek Salad dressing for a simple appetizer recipe or as a side dish.
One of the best things about summer is all the fresh fruits and veggies. I love heading to a local Farmer’s Market to pick out all the amazing fresh goodies the season has to offer us.
This Greek Cucumber Salad is a great recipe to use those fresh cucumbers and tomatoes in. A crispy cucumber gives a nice crunch while the tomato gives a fresh softness to the salad.
It almost reminds me of Pico De Gallo with all the fresh ingredients.
Easy Cucumber Salad
One of the things that I like about this cucumber salad is the feta cheese in it. I’m a total cheese fan so this is definitely something I enjoy.
I also like how easy it is to make and that you can use fresh ingredients.
I start by peeling two cucumbers with a veggie peeler, you could leave the skin on if you like. My family normal prefers the skin off so that is what I did. Once the cucumber is peeled I cut in it in half lengthwise.
Then I will make two more long cuts in each half and cut these into cubes. Add the cubbed cucumbers into a large bowl.
Dicing a red onion into smaller bite sizes I add that into the bowl with the cucumber.
I like using fresh herbs whenever I can so I decided that I would mince up fresh parsley to add to this dish.
Since tomatoes can be kind of messy, normally I will save them for last to cut up. Taking two larger tomatoes I then cut them into bitesize chunks.
Making The Cucumber Salad Greek
To make this cucumber salad a Greek Cucumber Salad I added Feta Cheese.
If you have never had Feta cheese before I recommend trying it. Feta cheese can be made with sheep’s milk or a combination of sheep’s and goat’s milk.
It’s a crumbly aged cheese with a bit of a tangy and salty taste to it. Feta is great in salads or server in dishes with olives.
I’m not a huge fan of olives but you could also add some to this salad if you like olives.
For the dressing, I went simple and used a store-bought Greek Salad dressing. Drizzled the dressing over the salad ingredients and then tossed everything to coat and combine.
What To Serve With Greek Cucumber Salad
I like to serve this fresh salad with grilled chicken and corn on the cob. I think this would also be a great side dish to have with pulled pork or a grilled steak.
This salad goes well as a side dish with almost any meal so you really can’t wrong with this recipe. This would be great for a dish to pass at a cookout.
This recipe is best served cold. The cucumber and tomatoes will secrete water causing the salad to become watery. After a day this recipe may become watery, remove some of the liquid from the salad and serve again.

Greek Cucumber Salad

- 2 Large Cucumbers
- 1/2 Cup Red Onion
- 2 Tablespoons Fresh Parsley
- 2 Large Tomatoes
- 1/2 Cup Feta Cheese crumbles
- 1/2 Cup Greek Salad Dressing
Peel both of the cucumbers. Cut them up into bite-sized pieces. Add to a large bowl.
Dice the red onion into small chunks. Add to the bowl with the cucumbers.
Mince the fresh parsley and add to the bowl.
Cut the tomatoes up into bite-sized chunks and add to the bowl with the other ingredients.
Add the Feta cheese crumbles into the bowl with all the ingredients.
Drizzle the Greek Salad dressing over all the ingredients and toss to coat and combine everything together.
This dish is best served cold.
