Breakfast Egg Sandwich is a great way to start the morning off. Made with biscuits, eggs, cheese, and sausage. These easy-to-make breakfast sandwiches can be meal prepped for busy mornings.
This recipe is a great idea if you do any meal prepping. I like to make a batch up and then wrap in foil and baggie them up before placing them in the freezer.

How To Make Breakfast Egg Sandwiches
One of the best tricks I have is making the eggs in a whooppie pie pan then bake them in the oven. I find these work so much better than a muffin pan but of course you can use what you have.
Okay, a little side story about this whoopie pan. I drug my husband to multiple stores looking for one with no luck. I get home and dig in my cupboard and what do you know I already had one.
So this says a couple of things to me, one being I really need to be more aware of what I have. And two I have a very patient husband that allowed me to drag him on my quest.
Anyway, I'll stop rambling and get back to the topic.
Cracking the eggs into the pan I then break the yolk up a bit using a fork. Placing the whoopie pie pan into a preheat 350℉ oven for 20 minutes or until the eggs are done.
Building The Egg Biscuits
For the biscuits you can do a couple of things, you can make biscuits from scratch or do as I did and buy those refrigerated biscuits.
You know those ones that get your heart racing because of the pop when you open them. Even the thought of opening these cans gets my heart racing, how about you?
I placed the biscuits in the oven at the same time as the eggs and they where both done in 20 minutes.
For these, I used sausage patties that I baked in my Omni Air fryer. These only took about 8 minutes in there. Before I got the air fryer I would bake the sausage in the oven along with the eggs.
These will take about 30 minutes or so in the oven that way.
Once the eggs, biscuits, and sausage were done I let them cool a bit.
Cutting the biscuits in half then placing an egg, sausage, and cheese if you like on the bottom half of the biscuit then put the top on.
You can serve and enjoy right away or you can let them cool completely and then wrap in foil and place into a sandwich baggie and place into the freezer for breakfast on the go.
If you don't like sausage like one of my kids you could use Canadian bacon or even bacon.
For cooking the sausage you could also cook it on the stovetop.
Instead of biscuits, you could use English muffins, bagels, or even toast, the choice is yours. I find that using the biscuits for freezer meal prep is how my family likes them.
I do recommend spraying the whoopie pan with cooking spray and then using a butter knife to help get the hot eggs out of the pan.
If you are planning to meal prep these sandwiches and you like cheese on your egg sandwiches. I suggest waiting to add the cheese until you heat the egg sandwich up for your breakfast.
If you're freezing the sandwiched they can be reheated in the microwave for a 1 minute or so. The time will depend on your microwave and how fast it heats.
Again if you're freezing these they need to be completely cooled before placing them into the freezer. We hope you enjoy this breakfast egg sandwich recipe.

Once biscuits are done cut in half add eggs, sausage, and cheese to the bottom half of the biscuit. Add the top half and enjoy.
