Instant Pot Pancake Bites are simple to make with few ingredients. Add blueberries or mini chocolate chips to these fluffy pancake bites for a complete breakfast.
My kids are not much for breakfast, really none of in our home are. Or at least most of the time but every now and then we would rather have a grab and go breakfast, you know something that is already made.
As a mom, I would rather see the kids eating something that is homemade rather than out of the cereal box. But honestly who really wants to be up cooking first thing in the morning. That is unless it’s weekend morning and there is time for it.
That’s what I love about making these Instant Pot Pancake Bites. I can make them up the night before and if they last past snack time. The kids can pop them in the microwave for a few seconds for a quick breakfast.
These pancake bites also freeze well so that makes them great for freezer prepping. Pair these with our Instant Pot Egg Bites for a complete breakfast.
What is so great about these pancake bites is you can personalize them to each person. I have one child that loves blueberries but two that don’t.
Whereas all three love chocolate chips in their pancakes. So when I whip these bites up I like to mix a few plain, a few with fresh blueberries, and some with mini chocolate chips.
Maybe even a little bit of sprinkles in the batter to make confetti pancake bites. The possibilities are endless!
For this recipe I used the silicone egg molds, I have two sets which gave me the opportunity to make some bites with chocolate chips and some with blueberries.
Since the egg molds are made of silicone this allows you to be able to pop the bites out easier, however, I would still recommend spraying the inside with cooking spray.
I did use fresh blueberries in some of the bites. Frozen berries may make the pancake bites a bit on the wetter side. As the berry cooks it will lose the moister from being frozen adding more liquid into the batter.
Instant Pot Baking
There isn’t much that an Instant Pot can’t do. This may be why it’s one of the most used small appliances in our home and why I have two.

What I have found that I like about baking in the Instant Pot is it’s simple and quick. And I really like baking with these egg molds.
To make these Instant Pot pancake bites I used two of the eggs molds, foil to cover the egg molds with, and the trivet that came with my IP.
Once I had the pancake batter mixed together I added 2 tablespoons of batter to each of the cups in the egg molds. Then added my chocolate chips and blueberries the batter.
Covering each of the molds with foil then place them on the trivet that is inside the inner pot. Make sure that you add the correct amount of liquid that you IP needs. Since I was using my 8-quart I used 1 1/2 cups of water.
Pressing the pressure cooker button and adjusting the cooking time to 14 minutes. Make sure to use high pressure or the pancake bites will not be cooked all the way.
Once the cooking time is done do a natural release for 5 minutes then serve.
Freezing Pancake Bites
If you do any type of meal prepping then this is the perfect breakfast recipe for you. You can freeze these pancake bites in the freezer for up to 3 months. I would recommend letting the bites cool down completely before freezing them.
Then pop one or two into the microwave for 30-45 seconds for a quick and easy breakfast on the go.
Or they can be stored in the refrigerator for up to three days. That is if they last in your home that long. Like I said in our home I’m lucky if they make it past snack time.

- 1/4 Cup Butter Melted
- 1 Large Egg
- 1/3 Cup Powdered Sugar
- 1 Cup Flour
- 2 Teaspoons Baking Powder
- 1/2 Teaspoon Baking Soda
- 1/8 Teaspoon Salt
- 1 Cup Milk
- 1 Teaspoon Vanilla
Melt butter in a small bowl, set aside
In a larger mixing bowl mix together the egg and powdered sugar until combined.
Add the flour, baking powder, baking soda, salt, milk, vanilla extract, and melted butter into the egg mixture.
Mixing until all ingredients are combined.
Spay two egg molds with cooking spray and add 2 tablespoons of batter to each cup of the mold. Add any extras like chocolate chips or blueberries now. Making sure to sink them into the batter a bit.
Add 1 cup of water (or required amount for your Instant Pot) to the inner pot of your Instant Pot. Cover the egg molds with foil.
Place foil covered egg molds onto a trivet and place it into the inner pot.
Place the lid on the Instant Pot making sure the sealing value is set to sealing. Press the pressure cooker button and then adjust the cooking time with the plus and minus buttom to 14 minutes.
Once the 14 minutes of cooking time is done let the Instant Pot do a natural release for 5 minutes. (natural release is when the IP lets out the steam on its own) There will still be pressure inside the Instant Pot so turn the release valve to venting and release the remaining steam.
Remove the egg molds and enpoy the pancake bites.
