These sweet, soft, gooey cookie cake bars have become one of my kid’s favorite afternoon snacks lately. They make up quickly and since they are made with a cake mix you don’t need that many other ingredients. This makes them perfect to make for a quick homemade after school snack.
If you are looking for a quick and simple cookie recipe, but don’t want to spend all day baking. Then these cookie cake bars are just what you need.

How To Make Cookie Cake Bars
Transform a yellow box cake and chocolate chips into these simple dessert bars.
In a large mixing bowl add the yellow cake mix, melted butter, and eggs. Adding melted butter and eggs help to make the cake mix soft and decadent.
With a hand mixer, mix together all the ingredients until they are combined. Although this is a thicker batter you can mix this by hand. Once you have all the ingredients mixed together you can add the chocolate chips.
This is where you can get creative with your cookie bars. Add different flavored baking chips, walnuts would be a great addition, or even mini M&M’s.
Taking a 9×13 baking dish you will want to spray it with cooking spray, these bars will stick to the pan otherwise.
With the 9×13 baking dish prepared, spread the batter out using a rubber spatula. You could also spray your hands with the cooking spray so the batter doesn’t stick to your hands. Then press the batter evenly into the baking dish.
The batter is a little sticker which makes it hold the chocolate chips better. Because it’s sticker it is a little harder to spread in the baking dish. That’s where using a rubber spatula or using your hands to disburse it evenly will help.
Once you have the batter in the baking dish place it into a preheated 350℉ oven. Bake these goodies for 22 minutes or until done. You can check for doneness by inserting a toothpick in the center, if it comes out clean then they are fully baked.
As the bars bake the edges will turn a golden brown and the dessert will puff up. These are signs of the dessert bars being done.
Before cutting into these bad boys you will want to let them cool completely. I know this may be hard to resist because they look so yummy and smell amazing. But if they are still warm when you cut into them they will become gooey like they are not baked all the way.
Can I Use Other Cake Mix Flavors
Now you may be wondering if you can use other cake mix flavors instead of the yellow cake mix. The answer is yes, of course, go ahead get creative with your dessert bars.
I like to use a chocolate cake then add chocolate and peanut butter baking chips. Oh my goodness, they are also wonderfully good.
I’m thinking with the chocolate cake mix adding Andes mint chips would be a great idea, or maybe even white chocolate chips.
Change up the baking chips to cinnamon or butterscotch chips with the yellow cake mix would also be yummy. How about a strawberry cake mix with white chocolate.
These make a great afternoon snack but they could easily be a great birthday treat by using funetti cake mix. Or have these cookie cake bars with ice cream and topped with hot fudge for an over the top dessert.
The possibilities are endless with all the flavors of cake mixes and baking chips combinations there are.

- 1 Box Yellow Cake Mix use mix as is in the box
- ½ Cup Butter Melted
