Slow cooker beef roast with potatoes and carrots is a simple dinner recipe to make in the crock pot. It's a fall apart tender and juicy roast that is full of flavor.
Put this simple recipe for a beef roast with potatoes and carrots together for a Sunday night dinner. Or have it any night of the week since the crock pot does all the work. To top this recipe off make gravy that is made from the pan drippings. Then cover the meat and potatoes with the gravy.
I have heard my husband say many times roast beef with potatoes and carrots is his favorite meal. Well you know sometimes a girl needs to use these tidbits of information to her advantage.
So when I want to collect some extra brownie points with him I make up this simple recipe. He may think I have worked hard all day preparing his favorite meal but really it's the slow cooker that has done most of the work.
Since he has been working hard on our basement project. I decided that I needed to treat him to his favorite meal. So come along with me as I show you my tips on getting a tender beef roast.
Recipe For Slow Cooker Beef Roast
Let's start by talking about the roast. I have discovered the key to getting a tender and moist beef roast is the cut of meat. My goal when making a roast is to have it fall apart when removed from the slow cooker.
Over the years I have tried many cuts of meat in order to get that tender roast. I have found the best cut of meat that comes out tender and moist is a chuck eye or rump roast. Even though these cuts of meat can be tough they cook up tender in the crock pot.
To give the roast more flavor I season both sides of the roast with both Italian and steak seasonings. I'll press the seasonings down onto the meat so the seasonings stick to the meat. Then when I add the liquid into my crock I'll make sure not to pour it onto the meat. That way the liquid doesn't wash the seasonings off the meat. So I pour the liquid on the side of the meat or top of the vegetables.
There is no need to brown this roast before adding it to the slow cooker. It's full of flavor but you could brown it to add even more flavor. Add the prepared roast into the slow cooker.
With Or Without Vegetables
With or without vegetables this is a great roast recipe. But to me, a roast dinner isn't complete without potatoes and carrots.
Since this is my husband's favorite meal I have made it many times over the years. That means I have tried adding my potatoes and carrots in the crock pot first as well as on top of the roast.
My preferred way is to have the vegetables on top of the roast. This way they don't absorb as much of the juices from the meat as they would under the roast. They may turn out a little firmer if placed on the top of the roast.
So on top or under the roast, I would say is your preference.
When making a slow cooker roast with potatoes and carrots. I like to use beef broth as my cooking liquid. The beef broth will not only add more flavor to the roast and vegetables. But it makes up an amazing flavorful gravy.
There is no need to cover the roast with liquid, however, if you want lots of gravy. I would add at least 2 cups of broth into the crock pot.
How Long To Cook
In order to get that tender roast and perfectly cooked vegetables. The cooking time should be no less than 6 hours on high heat. Or 9 hours on low heat. For a 3-4 pound roast. Cooking time may be longer for a larger roast.
Since I'm a work at home mom I tend to set my crock pot meals up around 11 in the morning. This gives my meals plenty of time to cook on high for our early dinner time of 5 pm. However, you could have your slow cooker start at 8 in the morning on low and it would be ready for a 5 pm dinner.
Since we cooked the potatoes and carrot in the crock pot with the beef roast. This is a complete meal, sometimes we also enjoy dinner rolls with this meal.

Slow Cooker Beef Roast
Make this tender beef roast that is fall-apart good. Make it with potatoes and carrots for a complete meal.
Ingredients
- 3-3.5 Pound Chuck Eye Or Rump Roast I used a chuck eye roast
- 2 Tablespoons Steak Seasoning
- 1 Tablespoon Italian Seasoning
- 2 Cups Beef Broth
- 1 Large Onion
- 4 Large Whole Carrots
- 6-8 Potatoes I used red potatoes
Instructions

Spray the inner crock with cooking spray

On a plate place the roast. Season both sides of the roast with the steak and Italian seasonings. Pressing the seasonings into the meat on both sides. Add the seasoned roast into the crock pot.

Pour the beef broth into the inner crock. I try to not pour the beef broth onto the seasoned roast. That way the seasonings don't wash off.

Remove the skin from the onion and cut it into chunks. Add into the inner crock with the meat.

Peel the carrots and cut them into 1-inch chunks. Add into the inner crock along with roast and onions.

Wash the skin of the red potatoes and cut them into chunks. If using russet potatoes you can peel the skin off if you like.
Add into the inner crock with the roast, onions, and carrots.

Place the lid on the slow cooker. Set to high for 6 hours or set to low for 9 hours.
Recipe Notes
Cooking time will vary with larger size roast.
I cooked my 3.5-pound roast on high for 6 hours. You could cook that size roast on low for 9 hours.
