These 3 ingredient chocolate pumpkin muffins are an effortless and scrumptious treat. Using just a chocolate cake mix, a can of pumpkin puree, and chocolate chips, they are a cinch to prepare in a matter of minutes.

These 3-ingredient pumpkin muffins are healthier because we don't use milk, eggs, or oil to make them. Making them a dairy-free chocolate muffin and can be a vegan muffins depending on the chocolate chips used.

Ingredients Needed

Three simple ingredients are all that is needed to make these deliciously moist muffins.

Chocolate cake mix~ to get a richer chocolate flavor I used a devil's food cake mix. You could use a triple chocolate cake mix or chocolate fudge if you like. Or change the flavor of the pumpkin muffins all together and use a box of yellow cake mix as we did in our easy pumpkin muffins recipe.

Pure Pumpkin~ add moisture and fluffiness to the chocolate muffins. Pure pumpkin, pumpkin puree, or pumpkin is what can be used. You could use pumpkin pie filling but it will change the flavor of the muffins a bit. Since pumpkin pie filling has ingredients in it meant for pumpkin pie.

Chocolate chips ~ adding a cup full of chocolate chips to the muffin batter really adds to the overall flavor of these delicious muffins. Mini chocolate chips or even peanut butter chips would work for this recipe.

How To Make

These chocolate cake mix pumpkin muffins are quick to make. Into a large bowl add in a box of cake mix and a can of pumpkin puree. Using a hand mixer blend these two ingredients together until all the dry ingredients are incorporated into the pumpkin.

Fold the chocolate chips into the muffin batter. Prepare the muffin pan by either spraying the cups with nonstick cooking spray or lining them with muffin liners. This time I used cupcake liners but I have used cooking spray.

A tip I have is to spray the baking spray in the muffin cups then use a paper towel to move the spray around the cup to create an even coating. Another tip is to change the size of the muffins by using different size muffin pans.

Make mini muffins by using a mini muffin pan or make bakery-style muffins by using a larger muffin tin. The amount of muffins you get from this batter will also be determined by the size pan used.

Once the cup of chocolate chips is combined use a large cookie scoop to fill the muffin tin with the muffin batter. For added chocolate flavor take a handful of chocolate chips and place them on top of the scooped muffin batter.

Bake the 3 ingredient chocolate chip pumpkin muffins in the oven for 20 minutes. Allow pumpkin cake mix muffins to cool on a wire rack.

Once the muffins have fully cooled place them in an airtight container.

How long will pumpkin muffins last for?

They should stay fresh and moist in an airtight container for up to 4 days.

Can pumpkin chocolate muffins be frozen?

Yes, they can. Once they are completely cooled place them in a freezer safe bag or into an airtight freezer container. They will keep in the freezer for up to 3 months.

3 Ingredient Chocolate Pumpkin Muffins

Moist chocolate pumpkin muffins made with a box cake mix with semi sweet chocolate chips mixed in. This easy recipe is made with three ingredients and can be ready to enjoy in under 30 minutes.

Ingredients

  • 15 Ounce Devils Food Cake Mix 1 box
  • 15 Ounce Pumpkin Puree
  • 1 Cup Semi Sweet Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees, prepare the muffin pan with either cupcake liners or nonstick cooking spray.

  2. In a large mixing bowl add in the cake mix and pumpkin. Mix until combined.

  3. With a rubber spatula mix in the semi sweet chocolate chips until all are coated with batter.

  4. Using a large cookie scoop fill the prepared muffin pan with the muffin dough.

  5. Place muffin tin in the preheated oven and bake for 18-20 minutes. All ovens bake differently adjust the baking time to your oven.

  6. Place muffins on a wire rack to cool.
