How To Make These Delicious Chocolate Chip Cookies
I find that starting with the dry ingredients whenever baking is always my first step. I'm big on making sure to sift my all purpose flour to remove any lumps. For this recipe, I do recommend sifting the baking cocoa as well. In the video, I had only sifted the flour, not the baking cocoa. It didn't affect the outcome of the cookies, I just had to mix the batter longer to remove the lumps.
In a medium bowl whisk or sift together the all purpose flour, baking soda, baking cocoa, and salt. Set the bowl aside until ready to add to the wet ingredients.
In a large bowl or your stand mixer bowl cream the room temperature unsalted butter, brown sugar, and white sugar until light and fluffy. This will take about 2-3 minutes. If you choose to use a stand mixer I find the paddle attachment works best at combining all the ingredients together.
Add in the large eggs, only one at a time until both of the eggs are combined. Next, add in pure vanilla extract and the Baileys Irish cream liqueur into the butter mixture. Mix until all the wet ingredients are combined.
Slowly add the dry ingredients to the wet ingredients until all are combined together. Making sure to scrape the sides of the bowl as necessary to get all the ingredients while making the cookie dough.
When adding in the flour mixture I like to start my stand mixer or my electric hand mixer on low speed. When there isn't a chance of the flour going all over the place. I will turn whichever mixer I'm using up to medium high speed to get all the ingredients incorporated well. Add the semi-sweet chocolate chips to the cookie dough batter.
Baking Time
Lining a cookie sheet pan with either silicon liners or parchment paper will help the Irish cream cookies from sticking to the cookie sheet pan. For larger cookies use a cookie scoop that holds two tablespoons. For smaller cookies use a smaller cookie scoop.
When scooping the cookie dough out onto the prepared baking sheet, place the dough balls about 1 ½ inches apart from each other. The Baileys chocolate cookies do spread out some as they bake. If placed too close the cookies will bake together.
Place the filled sheet pans into a preheated oven that is set at 375 ℉ bake cookies for 11-13 minutes. Or until the edges of the cookies are a golden brown color. The time will depend on your oven as well as the size of the cookies. Smaller cookies will not take as long as larger cookies.
When the edges of the cookies are golden brown remove them from the oven. Let the cookies sit on the sheet pan for 5 minutes. After the 5 minutes on the baking sheet pan place the cookies on a wire cooling rack to cool completely.
Tips
One of the things I love about these delicious double chocolate chip cookies is there is no chill time needed. Plus these Bailey's Irish cream chocolate chip cookies don't need to be flattened before baking. Since they are scooped out into a ball form, they will spread out some as they bake to make the perfect sized cookies.
Don't overbake the cookies, you want these cookies to be soft and tender. You will want to store these cookies in an airtight container.

Preheat oven to 375℉

In a medium mixing bowl sift together the flour, baking soda, baking cocoa, and salt. set aside.

In a large mixing bowl or the bowl of a stand mixer cream together the room temperature butter, brown sugar, and granulated suagr. Cream until light and fluffly.

Into the sugar mixture add in one egg at a time until combined. Once both eggs are combined add in the vanilla extract and Bailey's Irish Cream. Mix until all the wet ingredients are combined well.

To the wet ingredients slowly add in the dry ingredients until all is added and combined.

Using a rubber spatula or spoon, hand mix in the chocolate chips.

Scoop the cookie dough out using a cookie scoop onto a prepared cookie sheet pan. I like to use silicone liners or parchment paper on my baking sheets. Space the scoops of cookie dough at least 1 ½ inches apart.

Bake in a preheated 375℉ oven for 11-13 minutes. This will depend on your oven, mine takes 13 minutes. You want the edges of the cookies to be a golden brown color.

Allow the cookies to cool on the cookie sheet pan for 5 minutes before placing them on a wire cooling rack to completely cool.
