Chicken Salad Sandwich makes a great summertime lunch or even dinner recipe. Chicken salad is made with only a few ingredients making this a quick and easy recipe.

If you are looking for an easy chicken recipe then this chicken salad recipe is it. It's the best chicken sandwich recipe that is made with chunks of chicken, red onion, and celery, all in a creamy dressing.

What I like about this classic chicken salad recipe is that it can be made with fresh chicken or even canned chicken. Sometimes I even use leftovers from when I make a whole roasted chicken for this recipe.

Chicken Salad Sandwich Recipe

Chicken salad is easy to prepare so let's start with the chicken. You have three choices on what chicken you use.

You can either use leftovers, make shredded chicken, or use canned chicken.

We have made it all three ways. The canned chicken I felt made the recipe lack in meat even though I used two cans.

It didn't change the flavor of the recipe at all. And it is a great idea if you have canned chicken in the pantry to use up.

Leftovers can be a hit or miss around our home. But if I have leftover chicken I'll make this recipe up for my husband to have for lunch the next day.

Making the chicken in the Instant Pot is super quick and is how I did it for this recipe. You all know how much I love my Instant Pot. Using it to make shredded chicken only takes 30 minutes to make.

Now you can either shred the chicken or cut it into chunks. Giving a rough chop to the cooked chicken breast. Make sure to have bite-sized chunks of chicken.

Once the chicken was chopped add it into a large bowl.

Dice up a celery stalk and red onion into smaller bite-sized pieces. After I dice the celery and onion I'll take my knife and do another rough chop over them. This makes them more bite-sized.

Add them into the bowl with the chicken, set the bowl aside.

The onion and celery gives a nice crunch to the salad however if you don't like a red onion you could use green onion.

How To Make The Simple Dressing

For the dressing add miracle whip, mayo, sugar, yellow mustard, celery seed, salt, and pepper into a smaller bowl. Mix all the ingredients together until the sugar is dissolved.

I used both mayo and miracle whip because I like the creaminess the mayo gives. However, I also like the zip you get from miracle whip.

The little bit of sugar I used helps to calm that zip down some. Of course, this is a step you can skip if you like.

Let's take a minute and talk about celery seed. Celery seed is a small seed that is light brown in color.

The seeds taste like celery with an earthy/grassy but yet bitter edge. They have many health benefits because of their nutritional value.

If you don't like the flavor that the celery seeds bring to the recipe you can omit that. To me, the seeds add more flavor and I like how they make the salad look.

Easy Chicken Salad Recipe

Once you have the dressing mixed together pour it into the large bowl with the other ingredients. Mix everything together until all is combined.

Eat as is or top your favorite bread with this delicious salad recipe.

We like to have this salad on croissants with fresh lettuce. The buttery flavor of croissants makes for a great chicken salad sandwich.

I also like to place it on roman lettuce leaves for a healthier lunch idea. You could also stuff a pita shell with it or spread it on a tortilla shell with lettuce for a wrap.

You will want to keep this recipe on hand for a quick and easy lunch idea or even for dinner. These chicken salad sandwiches go really great with our Instant Pot corn on the cob recipe for a complete dinner idea.

Ingredients

  • 2 Cups Chicken Cooked
  • 1 Stalk Celery Chopped Small
  • ¼ Cup Red Onion Chopped Small
  • ¼ Cup Miracle Whip
  • ¼ Cup Mayo
  • 1 Teaspoon Sugar
  • ¼ Teaspoon Yellow Mustard
  • ½ Teaspoon Celery Seed
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Black Pepper

Instructions

  1. Cut pre-cooked chicken into chunks add into a large bowl.

  2. Chop celery and onion into smaller bite-sized pieces, add into the bowl with chicken.

  3. In a smaller bowl add the Miracle Whip, Mayo, Sugar, Yellow Mustard, Celery Seed, Salt, and black pepper. Mix ingredients together until sugar dissolves.

  4. Add the dressing into the larger bowl with the other ingredients. Mix all ingredients together until combined.

  5. Serve on your favorite bread or a croissant.
