Cornbread With Creamed Corn

Cornbread with creamed corn comes out moist with crispy edges and is a bit on the sweet side. Our cornbread casserole recipe is made with Jiffy corn muffin mix, egg, milk, sugar, and creamed corn.

Baked in a cast iron skillet with butter to get crispy edges. This easy to make cast iron skillet cornbread recipe is sure to be a crowd pleaser.

Cornbread has become one of my favorite quick bread to make. It's easy to mix together and bakes up so wonderfully in a cast iron skillet. I have a couple of tips to make this quick cornbread recipe turn out amazing.

With the rising cost of groceries, I'm always looking for ways to stretch my grocery budget further. This easy to make cornbread with creamed corn recipe is not only budget friendly but is also simple to make.

Jiffy corn muffin mix is one of those affordable mixes that are great to have stocked in the pantry. If Jiffy corn muffin mix isn't a pantry staple in your home you can find it in the baking aisle for under .60 cents.

Ingredients

This recipe for cornbread with creamed corn is made with a few simple ingredients that you may already have in your pantry. Jiffy corn muffin mix is the base of this cornbread recipe.

Creamed corn brings more corn flavor to this cornbread bread recipe and also helps to add moister. The sugar helps to add a bit of sweetness. T

he milk helps to make the cornbread moist as well as does the egg. The egg also acts as a leavening agent for this cornbread with creamed corn.

My first tip is to melt butter in the cast iron skillet. Butter is melted into the cast iron skillet before adding the other mixed ingredients into the skillet. The melted butter helps to create a crispy crust as well as add a buttery flavor to the crust.

How To Make

Our creamy cornbread casserole recipe is simple to make and comes out of the skillet moist with crispy edges. The key to making this recipe is using a cast iron skillet to bake the cornbread in.

To get those crispy edges we need to use a bit of butter. Into the skillet, 4 tablespoons of butter is added. The 12-inch skillet is then placed into a preheated 400 ℉ oven for 10 minutes. This will give the cast iron skillet time to heat up as well as the butter to melt completely.

While the skillet is in the oven go ahead and mix together the remaining ingredients. Remove the skillet with the melted butter from the oven and pour the cornbread batter into the skillet on top of the melted butter.

Now, this next step and tip does add time to making this recipe. But trust me it is what helps to get those crispy edges on the cornbread casserole.

Let the skillet full of the cornbread mixture sit for 30 minutes before baking it. Because the cast iron skillet is warm and has melted butter in it. It will start to bake the cornbread casserole as it is sitting for the 30 minutes. Giving the edges of the cornbread with creamed corn extra time to crisp up without overbaking and drying out the whole casserole.

If you don't have a cast iron skillet this cornbread recipe can easily be made in a 9x13 baking dish. Simply eliminate the butter and spray the baking dish with cooking spray.

There is no need to preheat the 9x13 baking dish prior to adding in the cornbread mixture. Nor is 30 minutes of prebaking resting time needed, simply add the mixture to the baking dish and bake. Baking time may need to be adjusted slightly.

How To Serve Cornbread Casserole

Enjoy this cornbread with creamed corn recipe in many different ways, whether you cut it into squares, wedges, or scooped by the spoonful. We like to enjoy it with a dollop of sour cream. Drizzle honey on top of the cornbread with creamed corn for more sweetness.

Of course, butter makes everything even better, right. Slather some butter on top of the corn casserole right out of the oven. The butter will melt easily on top of the warm cornbread.

Bring in some spice with jalapenos. Jalapeno peppers can be mixed into the batter and baked into the cast iron skillet cornbread. This cornbread recipe with jalapenos would make the perfect side dish recipe with chili.

This easy side dish recipe goes great with many dinners. Cornbread with creamed corn is the perfect side dish for BBQ Pork Ribs and baked beans. Of course, it also goes great with most soups, stews, and chilis. It can also be used as a stuffing mix for that Thanksgiving turkey.

Cornbread With Creamed Corn

This recipe for cornbread with creamed corn comes out moist and dense. This sweet cornbread is full of corn flavor and a bit of butter. Made in a cast iron skillet with butter to help bring a buttery taste as well as achieve those crispy edges.

Ingredients

  • 4 Tablespoons Butter
  • 2 Boxes Jiffy Corn Muffin Mix
  • 14.25 Ounces Canned Creamed Corn
  • 1 Large Egg
  • 1 Teaspoon Sugar
  • ½ Cup Milk

Instructions

  1. Preheat Oven to 400℉

  2. Add the 4 tablespoons of butter into a cast iron skillet. Place into the oven for 10 minutes.

  3. In a large mixing bowl add in the boxes of cornbread mix, ( I whisked the cornbread mix up before adding the other ingredients) the canned creamed corn, egg, sugar, and milk. Mix until all ingredients are combined.

  4. Remove the skillet from the oven and pour the cornbread mixture into the skillet.

  5. Let the skillet filled with the cornbread mixture sit for 30 minutes before baking.

  6. After the 30 minutes of rest time place into the oven and bake for 20 minutes or until done.

  7. Sever and enoy.
