Chewy no-bake peanut butter cornflake cookies are made with few ingredients. Making them a simple cookie recipe that can be made in a few minutes. These cookies are similar to our peanut butter no bake cookies and are sure to be a hit.
I have this little box that holds some of my most treasured recipes. As I was looking through it one day I came across this recipe. Only it was titled Matt's Cornflake cookies.

When my son was in I believe preschool they had a baking activity at Christmas time. He came home with this recipe and began begging me to make them with him.
I'm a firm believer in letting my kids help out in the kitchen. The look of pride on his little face after making these was a priceless moment.
Hince the name on the recipe card. So in our home, they will always be Matt's cornflake cookies.
These cookies are ideal to make during the summertime. Since they are a no-bake cookie that means you don't have to heat up the oven when you are craving cookies.
Or take them along to any potluck or family gatherings you may have throughout the year.
Cornflake Cookies Recipe
To make these no-bake peanut butter cornflake cookies. You will need to start with melting sugar and corn syrup together.
In a medium-size saucepan add the corn syrup and sugar together. Turn the burner onto medium-high heat, stirring constantly until the mixture starts to come to a boil.
As the corn syrup and sugar heat up they will start to melt. If the mixture gets cooked for too long then the final cookies will not set up.
With the corn syrup and sugar melted together stir in the peanut butter and salt. I used creamy peanut butter however you can use the chunky kind. I think chunky peanut butter will add a nice added crunch to these cookies.
As the peanut butter is stirred into the corn syrup and sugar mixture it will melt and become creamy.
Make sure the mixture is removed from heat when adding the peanut butter. We don't want the mixture to continue to cook.
In a large bowl add the corn flakes. I normally start will this step that way when the peanut butter mixture is ready all I have to do is pour it over top of the cornflakes.
Forming The Cookies
Stir the creamy peanut butter mixture into the corn flakes until all is combined. Then you can use a tablespoon or a cookie scoop to shape these drop cookies.
Don't be afraid to get in with your hands and shape the cookies.
I have seen these cookies colored green and made into a wreath, with cinnamon candy at the top. They could be shaped into balls and dusted with powdered sugar for a snowball look as well.
Making them into a wreath or a snowball would be ideal for Santa's cookie plate.
How To Make These Cookies Better
Want to make these cookies even better? Dip the bottom of them into melted chocolate once the peanut butter cornflake cookies have set. Then you have the perfect combination of peanut butter and chocolate.
Then drizzle more melted chocolate on the tops of these cookies. Oh my goodness talk about a delicious treat.
Make them festive by sprinkling colored sugar on top of the cookies before they set.
Or you can make these into a Christmas wreath by adding green food coloring into the corn syrup mixture. Once you form them into a wreath shape you can add those cinnamon candies to them or even a bow made from licorice.
Want a little bit more of a crunch to these simple cookies? Use crunchy peanut butter or mix in a ½ cup of chopped peanut nuts. Add these into the cornflakes then add the corn syrup mixture.

Peanut Butter Cornflake Cookies
These peanut butter cornflake cookies are a delicious no bake cookie that can be made up in minutes. These chewy bites of goodness are made with few ingredients.
Ingredients
- 1 Cup Sugar
- 1 Cup Light Corn Syrup
- 1 Cup Peanut Butter I used creamy but chunky will work
- ½ Teaspoon Salt
- 5 Cups Cornflakes
Instructions

In a large bowl add the corn flakes, set aside.

In a medium saucepan add the sugar and corn syrup. Bring the mixture just to a boil, but don't let boil for long.

Remove the mixture from the heat stir in the salt and peanut butter. Stirring until the peanut butter is melted into the sugar and corn syrup mixture.

Once the peanut butter has melted pour the liquid mixture over the cornflakes. Stir until combined.

Scoop out the cookie mixture with a spoon or cookie scoop and place onto wax paper. You will want to work quickly because it will set up fast. Allow to cool and completely set up.

Spray the inside of a liquid measuring cup with cooking spray to help the corn syrup come out easier.
