Crockpot roast with creamy mushroom gravy is a hearty meal that is perfect for busy weeknights. Tender chuck roast is slow cooked in a rich mushroom gravy, that is full of flavor. Pair this fork tender beef roast with mashed potatoes for a complete dinner idea.

This hearty chuck roast is seasoned with steak seasoning. And then seared in a skillet to lock in the flavor before it's slow cooked to fork tender. Freshly sliced whole mushrooms, onions, and garlic are sautéd together to enhance the flavor of the sauce. A creamy gravy is made with cream of mushroom soup, a 0f packet onion soup mix, Worcestershire sauce, and beef broth.

This slow cooker pot roast recipe is the perfect Sunday dinner. Since this beef roast slow cooks on low for 8 hours. It also makes for great weeknight dinners. Another great crock pot roast recipe is our slow cooker beef roast with veggies.

Ingredients Needed

The ingredients that is needed to make crockpot roast in a creamy mushroom gravy.

The ingredients needed to make this perfectly tender pot roast is pretty simple. Let's start out with what the best cut of meat is, and that would be a boneless beef chuck roast. Chuck eye or rump roast would work but a chuck roast defiantly comes out the most tender.

To enhance the flavor of the beef roast fresh mushrooms, diced onions, and minced garlic are sautéd together. For the creamy mushroom sauce cream of mushroom soup is mixed together with an envelope of dry onion soup mix, beef broth, worcestershire sauce, pepper, garlic powder, and onion powder.

How To Make Slow Cooker Roast In A Creamy Mushroom Gravy

The first step to making this delicious dinner recipe is patting the chuck roast with a paper towel. This will help remove any extra moisture on the meat which will help create a nice seared crust on the meat. Season both sides of the beef roast with the steak seasoning.

Heat up a large skillet, I like to use my cast iron skillet for this. Sear the chuck roast for 2 minutes on both sides in olive oil over medium -high heat. This will help to lock in the flavor of the meat but can be skipped. Trust me this step is well worth taking, it adds so much flavor to the roast.

After the roast has been seared sauté the mushrooms, onions, and garlic together in the skillet you seared the beef roast in. Add the sautéd mushroom mixture on top of the beef roast that is in the slow cooker.

To make the creamy mushroom gravy mix together in a medium sized bowl the cream of mushroom soup, Lipton onion soup mix, beef broth, black pepper, garlic powder, and onion powder. Pour the gravy recipe over the top of the beef roast.

Place the lid on the slow cooker and set it for 8 hours on low.

How To Serve, Tips And Substitutions

I like to serve this fork-tender beef roast over mashed potatoes with a side of fresh baby carrots. This recipe would also taste amazing over egg noodles with a side of green beans.

I love sharing tips that help to make our recipes easier to make. For this recipe, the first tip would be to definitely sear the beef roast before placing it into the slow cooker. Searing the meat really locks the flavor of the steak seasoning into the roast.

Since we are using the beef broth for the mushroom gravy there is no need to add any water to the condensed soup.

I also recommend using a programmable large crockpot that will keep warm after the cooking time is up. I switch to a programmable crockpot last year and love it.

Now let's talk substitutions, when it comes to the mushrooms I used white whole mushrooms but you can use cremini mushrooms. Pearl onions would be a great substitution for the yellow onion I used.

French onion soup would be a great substitute for the dry onion soup mix. However, you may want to cut back the amount of beef stock or eliminate it altogether. The added liquid will make the gravy runner but that could be fixed by making a cornstarch slurry to thicken the gravy with.

Once the roast was plated I sprinkled a few red pepper flakes on top for a bit of heat.

Crockpot Roast With Creamy Mushroom Gravy

Ingredients

  • 2 ½-3 Pound Chuck Roast
  • 1 Tablespoon Steak Seasoning
  • 2 Tablespooons Olive Oil
  • ½ Cup Onion diced
  • 8 Ounces Mushrooms sliced I used white mushrooms
  • 2 Tablespoons Garlic minced
  • 2 Cans Cream Of Mushroom Soup
  • 1 Packet Onion Soup Mix
  • ½ Cup Beef Broth
  • 1 Tablespoons Worcestershire Sauce
  • ½ Teaspoon Black Pepper
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Onion Powder

Instructions

  1. Heat a large skillet on medium high heat. Add in olive oil and allow the pan and oil to become hot.

  2. Pat both sides of the chuck roast with a paper towel. Season both side of the beef roast with the steak seasoning. When the oil and skillet are hot place the seasoned beef roast into the skillet. Sear both sides of the roast for 2-3 minutes or until brown.

  3. Place the seared beef roast into a 6-quart slow cooker.

  4. Into the skillet add in the mushrooms and onions, cooking for 2 minutes. Add in the garlic and continue to for 1 more minute or until onions are transparent.

  5. Once the mushroom mixture has cooked add it to the slow cooker.

  6. In a medium mixing bowl combine the mushroom soups, the dry onion soup mix, beef broth, Worcestershire sauce, black pepper, garlic powder, and onion powder. Pour over the roast and vegetables.

  7. Place lid on crockpot set on low for 8 hours.

Recipe Notes

If gravy isn't thick enough you may want to make a cornstarch gravy.
