  • Unsalted butter contributes richness and flavor to these cookies without adding in extra salt. I find using room temperature butter works best when baking cookies.
  • Granulated sugar not only provides that necessary sweetness but it also contributes to the texture of the cookies. It also helps to achieve a level of crispiness on the outside of the cookies. While also aiding in the overall structure and browning of the cookies during the baking process.
  • Brown sugar helps to enhance the flavor of the pecan coconut cookies while helping with the moisture and texture.
  • Eggs act as a binding agent to help hold the ingredients together in these delicious cookies. They also help to hold and maintain the shape and desirable texture of the cookies.
  • Vanilla extract enhances the overall flavor profile of these cookies. I love to use my homemade bourbon vanilla extract to bring out that nutty flavor of the pecans.
  • All purpose flour serves as the primary structural component. As well as contributing to the overall thickness and chewiness of the cookies.
  • Baking soda is the leavening agent that helps the cookies to rise and achieve a light and airy texture.

How To Make

Now that we have all the ingredients needed to make these delightful treats let's get to making them. I like to use my stand mixer but a large bowl and a hand mixer will work great for making these cookies.

Into the large bowl or the bowl of an electric mixer fitted with paddle attachment. Cream butter, white sugar, and brown sugar until light and fluffy. Add in the eggs and vanilla extract.

If you want to bring in more of a nutty flavor to these cookies, try using our homemade bourbon vanilla extract recipe.

In a separate bowl sift the all purpose flour, salt, and baking soda together. Then slowly add the flour mixture into the wet ingredients until combined. Scrapping the sides of the bowl as needed.

Now that those are combined it's time to mix in the sweetened coconut flakes, chopped pecans, and chocolate chips. To get the same sized cookies I prefer to use a large cookie scoop.

But you could also use a kitchen scale and weigh out the cookie dough before placing it on a sheet pan.

Once the cookie dough balls are placed onto a prepared baking sheet place in a 375 degree oven that has been preheated. Bake the cookies for 12-14 minutes or until done.

The tops of the cookies will be golden brown. Remove the cookie sheet pan from the oven.

Allow the cookies to sit for 5 minutes on the baking sheet before transferring them to a wire cooling rack. These chewy cookies taste amazingly slightly warm with a cold glass of milk or with a hot cup of coffee.

It sure can, I prefer to use the sweetened coconut but unsweetened will work just fine.

To get that chewiness the key is not to overbake. By taking them out of the oven when the center is still a bit soft. Then allowing them to sit on the hot baking sheet for 5 minutes to fully set up. Will help to achieve that chewy texture.

Can walnuts be substituted for the pecans in this cookie recipe?

Pecans can be swapped out for walnuts or leave out the nuts altogether.

How long will these pecan coconut cookies keep for?

Store them in an airtight container, and they should stay fresh for about a week.

Yes, coconut pecan cookies can be frozen. Once they have cooled place them in an airtight freezer safe container. Store them for up to three months.

Ingredients

  • ½ Cup Unsalted Butter room temperature
  • ½ Cup Granulated Sugar
  • ¼ Cup Brown Sugar
  • 2 Large Egg
  • 1 Teaspoon Vanilla Extract
  • 1¾ Cup All Purpose Flour
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • ⅓ Cup Pecans chopped
  • ½ Cup Sweetened Shredded Coconut
  • 1 Cup Chocolate Chips optional

Instructions

  1. Preheat oven to 375 ℉ prepare baking sheet with either silicone liners or parchment paper.

  2. Into a large mixing bowl or the bowl of a stand mixer combine the butter, granulated sugar, and brown sugar until light and fluffy.

  3. Add in the eggs and vanilla extract.

  4. Into a medium bowl sift together the flour, baking soda, and salt.

  5. Slowly add the sifted dry ingredients into the wet ingredients until all are combined.

  6. Using a rubber spatula mix in the chopped pecan, coconut, and chocolate chips until even dispursed.

  7. Using a large cookies scoop, scoop out the cookie dough and place on prepared baking sheet pan.

  8. Place sheet pan into the preheated 375-degree oven on the middle rack for 12-14 minutes.

  9. Remove the sheet pan from oven and allow the cookies to sit on the warm sheet pan for 5 minutes. The cookies will finish setting up on the warm sheet pan.

  10. Place cookies on a wire cooling rack to finish cooling.
