As much as I enjoying having mashed potatoes I don't like cooking them. The peeling, washing, cutting them up, and watching the pot so it doesn't boil over.
Don't forget there is the waiting for however long it takes for the potatoes to cook, then draining the water off them and the mashing.
The Instant Pot has been a big hit as of lately. Yes, I also joined in the fun. I must say I love my instant pot for many reasons but making mashed potatoes has to be up there with making the perfect hard-boiled eggs.
My IP took one of the things I didn't like about making mashed potatoes away. It doesn't take as long to make potatoes in the instant pot as it does on the stovetop.
Plus there is no worry about not watching the pot so it doesn't boil over onto the stove.
Instant Pot Mashed potatoes
The Instant Pot has become my go-to for cooking many recipes because it makes cooking so much faster and easier. Spaghetti like mashed potatoes has become another one of my favorites to make in the IP.
Here is how to get started. Using my Instant Pot Duo 6 quart, I poured 1 cup of chicken broth into it.
When I use my 8-quart I add 1 ½ cups of chicken broth, this way the pressure cooker has enough liquid to come to pressure with.
It is best to wash any dirt there might be on the potatoes. I do this by scrubbing the potatoes under running water. Next, cut any of the bad spots there might be on the potatoes off.
Then I chunked the potato up into cubes, seasoning the potatoes with Italian Seasoning and pepper.
Press the pressure cook button and adjust the cooking time to 10 minutes. After the IP came to pressure and cooked the 10 minutes I let it natural release which took about another 10 minutes.
A natural release is when the Instant Pot releases any of the pressure on its own. There might still have a bit of pressure so you will need to turn the sealing valve to venting.
This is a very simple recipe and there is no need to watch over a pot or check to see if the potatoes were getting close to being done.
How To Mash Potatoes In The IP
Once the natural release was done I removed the lid from the Instant Pot. Using a hand masher I feel is best because a hand mixer will scratch the bottom of your inner pot.
Mash all the potatoes up until you feel they are the consistency you will enjoy.
I didn't drain the chicken broth off, you could if you wanted to. I felt the broth added more flavor to the potatoes.
You could also substitute the broth after it was done cooking for milk or you can use both the broth and milk.
Add 1 tablespoon of butter and mix all the ingredients together.
Serve with your favorite recipe like meatloaf and enjoy.
This Instant Pot mashed potatoes recipe makes for a great side dish to go along with many main dishes. And it's a quick and simple side dish to make. Here's to perfectly cooked mashed potatoes.
