This Egg salad sandwich is an easy lunch recipe. Made with hard-boiled eggs, mayo, miracle whip, and mustard, then piled on your favorite bread for a great sandwich.
With the kids home more you might be looking for more lunch options. I thought I would pull out a classic recipe with this Egg Salad that has been a favorite of mine for a long time.

How To Make Egg Salad Sandwich
The first thing you will need to do is make hard-boiled eggs. I recommend checking out my recipe for Instant Pot Hard-Boiled eggs.
Since I bought my IP this is the only way I make hard-boiled eggs. I get perfect peeled eggs every time. Once you have the eggs hard-boiled you will want to cut them up. I just sliced the eggs in half the long way.
Then I cut the half in 4 slices and then cut in the other direction to make smaller cuts. Placing the eggs in a medium-sized bowl.
In our home, we seem to be having more debates as to what type of ingredients are better. Mayo vs Miracle Whip is one of them. So for my classic egg salad recipe, I used both the mayo and miracle whip to help with that debate.
A little squirt of mustard helps to add to the flavor of the recipe as well as gives the egg salad a more yellow color for an end result. I used the old stand-by yellow mustard however you could also use spicer mustard. Or even dijon mustard for more mustard flavor.
To enhance the flavor I add a little salt and pepper. This is up to you if you don't like salt or pepper then go ahead and omit it.
The Best Sandwich Ever
Mix all the ingredients together with a spoon. Then place it on your favorite brand of bread with or without lettuce to make it an egg salad sandwich.
To cut the carbs from the bread you could serve it wrapped in lettuce.
If you prefer your egg salad cold then refrigerate for 30 minutes in the fridge before serving it. I don't mind mine slightly warm (from the boiled eggs) so I serve mine right away.

Egg Salad Sandwich
Hard-boiled eggs mixed in a dressing that's made with mayo, miracle whip, mustard, salt, and pepper. Spread this egg salad onto your favorite bread for a quick and easy lunch.
Ingredients
- 6 Hard-Boiled Eggs
- ¼ Cup Mayo
- ¼ Cup Miracle Whip
- 1 Teaspoon Yellow Mustard
- ¼ Teaspoon Salt Or to taste
- ¼ Teaspoon Black Pepper Or to taste
Instructions

In a large bowl chop up the hard boiled eggs into bite sized chuncks.

To the chopped hard-boiled eggs into bite-size pieces. Add the mayo, miracle whip, mustard, salt, and pepper to the eggs.

Mix together until all ingredients are well combined. You may want to chill in the fridge for 30 minutes or serve it slightly warm.

Serve on you favorite bread or lettuce and enjoy.
