These are the simple ingredients needed to make this delicious shrimp ceviche recipe and what they do.

  • Raw Shrimp brings that tender texture to the ceviche and makes for a nice contrast to the avocado. You can replace the shrimp with scallops or fresh fish such as white fish like tilapia.
  • Fresh Lime Juice cooks the raw shrimp and also adds a bright and tangy flavor to all the ingredients. You can use lemon juice or even orange juice in replacement of the lime.
  • Roma Tomatoes add a firm texture with a mild sweetness to help balance with the tangy lime juice and richness of the avocado. You can use cherry tomatoes, plum tomatoes, or grape tomatoes. And of course, you can leave them out if you like.
  • Red Onion brings a sharp-pungent flavor with a bit of crunch. White onion or shallots would add a mild flavor to the shrimp ceviche.
  • Jalapeno Pepper gives the ceviche a little bit of spice with a little crunch. If you are looking for more heat from a pepper try a serrano, but if you are only looking for the flavor and crunch you can use green bell pepper.

How To Make Fresh Avocado Shrimp Ceviche

If you are using raw shrimp you will want to devein it before chopping it. Of course, you can buy already devein shrimp to make it easier. Into a large bowl add in the chopped raw shrimp and fresh squeezed lime juice.

Allow the shrimp to sit in the acidic marinade for 5-10 minutes. As these ingredients marinate together the shrimp cooks and starts to turn pink.

If you are using pre-cooked shrimp skip the 5-10 minute precooking of the shrimp and go to the next step.

Now we are going to add in the dice tomatoes, red onion, jalapeño, and fresh chopped cilantro. Toss these ingredients together, cover with plastic wrap, and place in the fridge for one hour.

After the hour of the shrimp ceviche marinating together, dice the fresh avocados into small bite-size pieces. Add the diced avocados into the shrimp mixture and toss the fresh ingredients together.

Dice all the ingredients the same size that way it's easier to scoop them up on a tortilla chip. Use a non-reactive bowl like a glass or stainless steel bowl to help prevent that metallic taste.

Ingredients

  • 1 Pound Raw Shrimp chopped into small pieces
  • 3 Large Limes squeeze the juice from the limes
  • 2 Large Roma Tomatoes diced
  • ¼ Cup Red Onion diced
  • 1 Large Jalapeno Pepper diced small
  • ¼ Cup Fresh Cilantro chopped
  • 3 Large Avocados diced into small pieces
  • ¼ Teaspoon Salt or to taste
  • ¼ Teaspoon Black Pepper or to taste

Instructions

  1. Clean and devein the raw shrimp.

  2. In a large bowl add the chopped raw shrimp and fresh squeezed lime juice. Allow the raw shrimp to sit in the bowl of lime juice for 5-10 minutes. As the shrimp sits in the lime juice it will cook and turn pink.

  3. Add in the tomatoes, onion, jalapeno, and cilantro. Toss all the ingredients together, cover and place in the refrigerator for one hour.

  4. Add in the chopped avocados and toss all the ingredients together seasoning with salt and pepper.

Recipe Notes

You can use pre-cooked shrimp just skip the 5-10 minutes lime juice marinade step.
