How To Pick The Best Sweet Corn
Okay, so you are at the grocery store or farmer's market buying fresh corn on the cob. How do you know if the corn is good other than pulling back the husk and looking at the corn itself?
Did you know that corn will dry out if you remove it from the husk? The husk helps to keep the corn moist and fresh. That's why when you buy corn on the cob the husk should feel damp. The husk should also be wrapped tightly around the cob. You will want to stay clear of yellow or dry husk means that the corn is drying out.
Also, check the husk for tiny brown holes, those are from bugs. If there are bug spots then there is a chance the corn has worms. Check the looks of the silk on the corn, it should be a golden or brown color. The tassels should be silky feeling, that's where the name silk came from.
If the silk is black or dry, again it's a good indicator that the sweet corn is dry. So the corn won't taste as good as fresh or as sweet as corn should. When pressing on the outside of the husk the kernels should feel firm and plump. Soft spots mean the corn is going bad.
With all these tips you should be able to pick out the perfect ears of fresh corn without pulling the husk back.
Cooking Sweet Corn In The Instant Pot
Once you have picked the perfect ears of corn you can decide if you want to cook the corn with or without the husk. I prefer to take the husk off.
If you are leaving the husk on then you will want to cut off the tip of the cob and remove any of the longer stems of the husk. This will help make sure the corn will fit in your pressure cooker no matter what size Instant Pot you are using. I have successfully used both my 6 and 8 quart IP's to make corn on the cob.
If leaving the husk on the corn you will want to add 3 to 4 more minutes to the cooking time.
In the inner pot of your Instant Pot place the trivet that came with your IP in it. Add 1 cup of water into the inner pot and stack the corn on the trivet. I was able to get three in one direction and then three on top going the other direction.
At this point, I like to add milk and butter as well. The milk and butter help to bring out the sweetness in the corn. This is also when I season the corn with pepper and salt. Trust me the corn comes out with so much flavor you will not want to add more butter before you eat it.
How Long To Steam The Corn
Place the lid on your Instant Pot and press the pressure cooker button. Make sure it says high pressure, then adjust the cooking time with the plus or minus buttons to two minutes.
You will want to check to make sure the pressure knob is set to sealing so the IP will come to pressure. It should take about 10 minutes for the Instant Pot to come to pressure and then cooking time will start.
When the cooking time is done let the Instant Pot do a natural release for 5 minutes. Your LCD screen will read L005, which means it has done a natural release for 5 minutes.
You will still want to turn the pressure knob to venting and let any steam that may still be in the pressure cooker release. Remove the lid and sever your perfectly cooked Instant Pot Corn On The Cob.
I recommend purchasing fresh corn on the cob however you can cook frozen corn in the Instant Pot if you like. All you need to do is add two extra minutes to the cooking time if it's frozen.
So instead of high pressure for 2 minutes, you will need to high-pressure cook for 4 minutes. Plus do the 5-minute natural release.
One way to change up the flavor of the corn on the cob is by adding different ingredients together. For this recipe, we added salt and butter however you could change the salt to garlic salt or even powder if cutting back on the sodium.
Butter, parmesan cheese, and garlic salt are great combinations. Or even butter, lime juice, and chili powder. The choices to spice up corn are endless. Cooking sweet corn in the pressure cooker is simple and fast. This is the perfect side dish recipe to have going while you are grilling.

Instant Pot Corn On The Cob
Sweet tender corn on the cob made in the Pressure Cooker.
- 6 Ears Corn On The Cob
- 1 Cup Water
- ½ Cup Milk
- 6 Tablespoons Butter
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
Husk the corn on the cob and remove the silk
Place trivet on the bottom of the inner pot of your Instant Pot. Stack three ears of corn going one way. Add the butter, salt, and pepper. Add the remaining three ears of corn, add butter, salt, and pepper.
Add the water and milk into the inner pot. Place the lid on the Instant Pot. Press the pressure cook button, making sure it's on high pressure. Adjust the time to 2 minutes. Make sure that the release valve is set to sealing.
Once the pressure cooker is done cooking do a natural release for 5 minutes.
Remove the lid from the Instant Pot and remove the corn to a plate and enjoy.
This recipe can be done in either a 6 quart or an 8 quart Instant Pot.
It will take about 10 minutes for the Instant Pot to come to pressure before it starts cooking.
