Mashed potatoes always seem to be a go-to side dish in our home. However, plain mashed potatoes haven't been going over so well with some of my family.
So I needed to kick them up a notch and load them with goodness. I have made these loaded mashed potatoes when we have had company over for dinner as well as for a Sunday dinner.
Every time they seem to be a big hit. I'm thinking with Thanksgiving and Christmas coming these might be on the menu.
Loaded Mashed Potatoes Recipe
Before we can load the mashed potatoes we need to make the mashed potatoes. When making mashed potatoes I like to cut the potato into smaller sizes. I find that this helps at the cooking time as well as when they are mashed.
Cut the potato in half then cut the half again and then chop chunks. As I'm cutting the chunks I'll add them into a medium-size saucepan. Cover the potatoes with water and boil until fork-tender.
While the potatoes are cooking you can start to cook the bacon. Placing the bacon on a cookie sheet that is covered in foil. I then place the cookie sheet in a 400℉ oven for 15 minutes. I find this is crispy enough for my liking, of course, you can go longer if you like.
When the potatoes are cooking that would be the perfect time to chop the green onion. Once the potatoes are fork-tender drain the water off of them.
Using a hand mixer start whipping the potatoes. As I whip the potatoes I will add the butter. Once the potatoes are whipped to your liking add the sour cream into the potatoes.
After the bacon has cooked place it on a paper towel to pat off any grease. Chop the bacon into bite-size pieces. Stir the bacon, cheese, green onion, salt, black pepper into the potatoes with a large spoon.
Loaded Mashed Potatoes Casserole
Spoon the loaded mashed potatoes into a 9x13 baking dish that was sprayed with cooking spray.
Then sprinkle the top with more cheese.
Place foil over the 9x13 baking dish and place it into a 350℉ oven for 1 hour.
This dish would go great with meatloaf or just about anything you would normally have mashed potatoes with.

Here are some tips I have for making loaded mashed potatoes.
- When cutting the potatoes I find the smaller the size I cut the potatoes into. The faster they cook.
- I like to think of ways that make cleaning up easier. Foil or silicone sheets are my go-to's in protecting cookie sheets. They have made cleaning up so much easier.
- The bacon I find it much easier to cook in the oven. Cooking bacon in the oven means less mess, no grease splattering over the stovetop. Plus you get perfectly crispy bacon doing it this way.

Ingredients
- 6 Large Potatoes peeled and diced into cubes
- 3 Cups Water
- 2 Strips Bacon Cooked
- ½ Cup Sour Cream
- ¼ Cup Butter
- ¼ Cup Green Onions
- ½ Cup Colby Jack Shredded Cheese
- ¼ Cup Colby Jack Shredded Cheese To sprinkle on top
- Salt To taste
- Black Pepper To taste
Instructions

Preheat oven to 350℉

Peel the potatoes then dice them into cubes. Place into a medium-sized saucepan.

Add enough water to the pan so that the potatoes are covered with the water. Place on the stove and boil until the potatoes are fork-tender.

Cook bacon to desired crispiness, see post for how I cook the bacon. Cut the bacon into bite-sized pieces, set aside.

Dice the green onion into a small size, set aside.

Spray 9x13 baking dish with cooking spray and set aside.

Once the potatoes are fork-tender drain the water.

Using a hand mixer start whipping the potatoes, add butter until smooth.

Add the sour cream into the potatoes and mix until the sour cream is incorporated completely.

Add the bacon, ½ cup cheese, green onion, salt, and black pepper. Stir by hand until all ingredients are incorporated.

Spread into prepared 9x13 baking dish, sprinkle ¼ cup of Colby jack cheese on top of mashed potatoes.

Cover with foil and back in a 350℉ Oven fro 1 hour.

Server and enjoy.
