Easy and healthy lunch meal prep ideas that are ideal for weight loss. These two low carb Bistro Boxes are simple to meal prep for the week.

I have been doing WW (Weight Watchers) for a few months now. What I love about this plan is I don't have to give up all my favorite foods. My healthy journey may be moving at a snail's pace but I can see where if I really stick to the plan it will work for me.

Going to WW meetings is like a new start each week for me. No matter if I feel the last week was good or bad.

While at a meeting recently I was thinking what could be my fresh start for this week? Being mindful of what I am eating, which lead to the idea of meal prepping.

Like most mom's I tend to think more about feeding my kids than I do myself. This is what has lead to my mindless eating habits. This habit has to change and that's where meal prepping will come in handy.

Healthy Meal Prep Ideas For The Week

Creating a couple of options for my lunches would be a great start to my meal prepping.

Hummus was my main focus for this healthy lunch Bistro Box. If you haven't tried hummus yet I recommend the Sabra- Roasted Garlic brand.

I had grilled chicken from the night before's dinner, a cucumber, romaine heart leaves, mini sweet peppers, and a hard-boiled egg.

I make my hard boiled eggs in my Instant Pot. If you haven't tried making hard boiled eggs this way yet, you really need to try it. The eggs peel so easy and are cooked perfectly each time.

The first accessory I bought for my IP was this egg trivet, which I love and also recommend purchasing. It allows me to make 14 hard boiled eggs at a time.

I decided that I would spread the hummus on the romaine heart lettuce leaves. Then add the sliced cucumber and chicken, making it a wrap which was really good.

Even though I used 1 ounce of the hummus I still didn't use all of it on the lettuce leaves. I was able to dip my mini sweet pepper in it. The egg I just ate on its own.

Using the same ingredients from the last Bistro Box but changing it up a bit to make this Bistro Box.

I chopped the romaine hearts up into bite-size pieces. I sliced cherub tomatoes and an egg in fourths and sliced a mini sweet pepper into rings. The cucumber I left in the long thin slices.

In these plastic cups, I added 1 ounce of a Lite Raspberry Vinaigrette. Placed 1.5 ounces of grilled chicken into one of the Bistro Box sections. This salad turned out amazing, the grilled chicken added so much flavor.

As I was making these I added them into the WW app to get the points. Which ended up being 3 points in each box. This was the perfect size lunch for me and it's healthy. Defiantly will be making both of these boxes again.

A container has lettuce, mini sweet pepper sliced , whole cherry tomatoes, and a Baby Bell cheese wedge.

With the extra ingredients I had, I was able to make 4 little salads for the girl's lunches. I thought the Baby Bells with the Toy Story theme would be a cute touch to their salad.

Letting them choose their salad dressing and anything else they want in their lunch. They also enjoy not having to put much thought into making their lunch.

The Benefits of Meal Prepping

There are so many benefits to meal prepping.

Removes temptation~ most of the time while I'm looking for my lunch I'm mindlessly snacking on higher calorie foods. So if my lunch is already prepped and in the refrigerator than I won't be mindlessly snacking. I call that a win!

Total Control~ by planning ahead and cooking your own meals you get to have total control over your food. Unlike going to a restaurant you may not know what your chicken is being cooked in.

At home I know if I cooked my chicken with olive oil or grilled the chicken as I did for these Bistro Boxes.

Time Saver~ If I'm making my lunch each day why not make enough for the week. Get it all done at one time, which saves me some time each day. To me, this is yet another win.

Stress Remover~ For me this one is a big deal. Prepping my lunch helps me not to stress about what I should or shouldn't eat. If I plan ahead and do my meal prep I know that I have lunches covered for the week. So then there is no worry about what's for lunch.

How many days should I meal prep for?

If you are wondering how many days should you meal prep for I would say take a couple of things into concretion.

Is this your first-time meal prepping? If yes I say only do as much as you are comfortable with making. It can be time-consuming if you are prepping for more than one meal. It's okay to start small.

Are you meal prepping for lunch, dinner, or both? If this is your first-time meal prepping than I say only focus on one. In this article, I only focused on my lunches for the week.

But by all means, if you feel comfortable prepping for both lunches and dinner, go for it! I have meal prepped for both lunches and dinners, it took up pretty much all of one Saturday. But I have to say was fun to do.
