  • Baking Powder is an additional leavening agent that will help the muffins to rise and become light and fluffy.
  • Salt enhances the flavor and helps to balance the sweetness of the ingredients.
  • Brown Sugar adds sweetness and moisture to the muffins. White sugar, honey, or maple syrup would be a great substation.
  • Cinnamon adds a bit of warmth and depth of flavor which complements the sweetness of the bananas and chocolate chips nicely.

It's time to whip up a batch of these delightful muffins. First, we need to start by preheating the oven to 350 degrees. This will help ensure these healthy banana applesauce muffins are baked correctly.

Next, you will want to prepare the muffin pan with either paper liners or by spraying with nonstick cooking spray; set this aside.

In a large bowl, sift together the flour, baking soda, baking powder, and salt. Set this bowl aside. In a large bowl or the bowl of an electric mixer, add the overripe bananas.

A mixing bowl that has mashed bananas, egg, and brown sugar in it for these delightful muffins.

Using a fork, mash the bananas until mushy, mashed bananas will mix in with all the other ingredients better. Add in the brown sugar, cinnamon, applesauce, and egg. Mix these ingredients until combined.

Ingredients

  • 1½ Cups All Purpose Flour
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Cinnamon
  • ¼ Teaspoon Salt
  • 3 Large Ripe Bananas
  • ¾ Cup Brown Sugar
  • ⅓ Cup Unsweetened Applesauce
  • 1 Large Egg
  • 1 Cup Mini Chocolate Chips

Instructions

  1. Preheat the oven to 350℉ and prepare a muffin tin with either paper liners or spraying with nonstick cooking spray.

  2. In a large bowl sift together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.

  3. In a large mixing bowl or the bowl of a stand mixer add in the bananas, use a for to mash the bananas.

  4. Into the mashed bananas add in the brown sugar, applesauce, and egg. Mix until combined.

  5. Slowly add the dry ingredients into the wet ingredients and mix until all the flour mixture is combined. Be careful not to over-mix.

  6. Fold in the mini chocolate chips using a rubber spatula. Fill the prepared muffin tin with the batter. You want the muffin cups about ⅔ of the way full.

  7. Place in the preheat 350 degree oven and bake for 18-20 minutes. Or until a toothpick comes out clean when inserted into the center of the muffin.

  8. Place on a wire cooling rack to cool and enjoy.
