No Bake Chocolate Cookies

Peanut Butter Chocolate No Bake Cookies are the perfect cookie recipe. Made with quick cooking oats, peanut butter, and baking chocolate.

Easy Cookie Recipe

They are sure to be a big hit in your family just like they are in mine.

The butter will start to melt faster if it's room temperature. Stir the ingredients constantly as you cook the cookie ingredients over medium-high heat.

Soon after the butter is completely melted the ingredients will start to boil.

Pan of boiling chocolate.

You will need to bring this to a full boil. A full boil or rolling boil is when the liquid in the pot gets involved in fast-moving rolling waves of bubbles. And the bubbles will give off steam.

Now that the ingredients have come to a full boil continue to boil for 2 full minutes. This will help to make the cookies set in the end.

Once the two minutes are up, you will need to turn the heat off of the burner.

Adding The Final Ingredients

Now that the ingredients have boiled for 2 full minutes it's time to add the rest of the ingredients.

I start with the vanilla, then I add the peanut butter. Stir the peanut butter into the other ingredients until the peanut butter is completely melted. I find doing it this way is easier than when the oatmeal is added in.

Then comes the oatmeal, stir until everything is mixed together.

Spoon the cookie mixture out with a spoon or with a cookie scoop and place on wax paper.

The cookies will need time to set up. You will know when they are set because they will have a nice sheen to them and they won't be runny like when you spooned them onto the wax paper.

Tips

When making these cookies I like to have all the ingredients out and measured ahead of time.

I recommend adding and making sure that the peanut butter is in before you add the oatmeal.

Use a timer!! Set a timer when the cookie mixture reaches a full boil. This is the trick to successful no-bake chocolate cookies. Be careful not to boil the mixture too long, then the cookies will be crumbly and dry.

But if you don't boil the mixture long enough the cookies won't set.

Wax paper I have found works best for placing the No Bakes Chocolate Cookies on. When they set up they come off the wax paper easily.

These cookies are a great idea for when the kids are asking for cookies in summer. No need to heat up the oven for these No Bake Chocolate Cookies.

Ingredients

  • 1 Cup Butter-room temperature I use Blue Bonnet in Sticks
  • 4 Cups Sugar
  • 1 Cup Milk
  • 1 Cup Baking Cocoa
  • 2 Teaspoons Vanilla Extract
  • 1 Cup Peanut Butter
  • 6 Cups Oatmeal

Instructions

  1. In a large Sauce pan add butter, sugar, milk, and baking cocoa. Mix ingredients together. Stirring constantly.

  2. Bring mixture to full rapped boil. Let boil for 2 minutes stirring the whole time. Setting a timer helps at this point. When the two minutes are up turn the heat off the burner.

  3. Add the vanilla and peanut butter. Stir the peanut butter until it is melted.

  4. Stir in all the oatmeal.

  5. Drop desired amount of cookie mixture onto wax paper. Let cookies set.

  6. Enjoy with a nice cold glass of milk.
