Have you ever wondered how to make oven-roasted butternut squash? Or have you wondered how in the world do you peel and cut up a butternut squash?
In this article, I will show you how I peel and cut a butternut squash up. I'll also show you how I roast the squash in the oven.
How to peel a butternut squash for roasting
Butternut squash can look a little intimidating to peel but really with a little patience and a vegetable peeler you will be fine.
At our last house, we had a vegetable garden. I can remember the first year that we grew butternut squashes calling my grandma and saying now what do I do with them?
She said the first thing you need to do is cut both the ends off the squash. I have found that it's best to use a large knife when working with butternut squash.
With the squash on a cutting board carefully cut both ends off, the squash likes to roll so hold it firmly.
Next using a vegetable peeler peel the skin off the squash. The smaller end isn't that hard but the bigger rounded end can be a little tricky. I try and take my time with this step.
Pushing down on the vegetable peeler helps with making this step a little easier.
Now that the butternut squash is all peeled it's time to slice it down the middle.
I place the tip of my knife blade about the center of the squash and start cutting towards the end of the tinner part of the squash.
I then do the same for the larger part of the squash.
As you can see the larger end of the squash has the seeds. This part is like when you carve a pumpkin for Halloween.
I use a larger spoon to scrape the insides clean.
How to cut up a butternut squash
Using that same large knife that I used to cut the squash in half. I then start cutting sections of the halves, then I cut up the sections into little chunks.
The smaller the chunks the less cooking time they will take.
With the butternut squash all cut into chunks I place the chunks on a cookie sheet. I like finding little tips and tricks in the kitchen that makes clean up easier.
I love to use foil pans from the dollar store whenever I can or I use aluminum foil. When I roast vegetables I like to make sure that my cookie sheet is covered with foil.
This helps tremendously when it comes to clean up.
Oven Roasted Butternut Squash
Now that the squash is on the foil covered cookie sheet. I drizzle olive oil over the squash along with a little bit of salt and pepper.
With my hands, I'll mix the squash chunks around in the olive oil to make sure they get a nice coating of the oil.
Placing the butternut squash into a preheated 450℉ oven.
When roasting vegetables I like to place them on the top rack of the oven, closer to the heat.
The butternut squash will need to roast about 50-60 minutes depending on how your oven cooks. My oven took 60 minutes to get them nice and roasted.
