How To Make These Mini Muffins
These mini muffins are perfect to stock the freezer up with on your next meal prep day. These bite sized fluffy pancakes in a muffin form make an easy breakfast idea for busy school mornings.
To make these mini pancakes you only need a few simple ingredients. The only dry ingredients needed for this recipe is your favorite pancake mix. I have used Krusteaz and our store brand pancake mix. The wet ingredients are melted butter, water, and an egg. And your choice of fillings like mini chocolate chips, sprinkles, or blueberries.
I start by melting the butter in a medium bowl and letting it cool slightly before adding it in with the egg. In a large bowl add in the pancake mix, water, egg, and melted butter. Mix until well combined and there are no lumps.
I do recommend a whisk to break up any lumps in the pancake batter. In my video, I used a rubber spatula to mix, and that worked but did take me some time to break up the lumps.
When it comes to the add-ins or the filling there are many choices. To make it fun for the kids mini chocolate chips or sprinkles are a hit. For a bit healthier option add in blueberries or raspberries. Want more of a savory option cook up some bacon or sausage to mix into these mini pancake bites.
Fold in your favorite toppings into the pancake batter. Grab a mini muffin tin and coat the cups with cooking spray. I have used liners for these but the mini pancakes do stick to the liners some. Fill the mini muffin pan cups up about ¾ of the way.
Bake in a preheated oven for 20-22 minutes or until the mini pancake muffins feel firm on top. Enjoy right away with maple syrup or let cool completely and store in an airtight container.
How To Freeze
These mini pancake bites are a great breakfast recipe that freezes well. Let the mini bites completely cool. Then place them on a baking pan and place into the freezer for a couple of hours.
Remove the baking sheet pan from the freezer and place the pancake bites into an airtight container or freezer bag. Store in the freezer for up to two months. When ready to enjoy these mini pancakes remove as many as you like and pop them into the microwave to reheat.
Tips
I'm a firm believer in using cookie scoops when making cookies, muffins, cupcakes, and these pancake bites. For this recipe, I used a small cookie scoop which filled the mini muffin pan cups up perfectly.
I have used mini cupcake liners but found that half of the pancake bites stuck to the liner. So what I do is spray the cups of the muffin tin with nonstick spray. Then use a paper towel to disburse the spray around the inside of the muffin cups.
These delicious little muffins are like having a pancake but with the convenience of a muffin. Since these mini pancake bites are so customizable they are sure to be a hit with the whole family.

Ingredients
- 2½ Cups Pancake Mix
- 1⅓ Cup Water
- 1 Large Egg
- 3 Tablespoon Melted Butter I used unsalted butter
- Filling of choice I used sprinkles,mini chocolate chips, and blueberries.
Instructions

Preheat oven to 350℉. Prepare mini muffin pan with liners or spray with cooking spray.

In a large mixing bowl add in the pancake mix, water, egg, and melted butter. Mix together until well combined.

Fold in your favorite fillings into the batter. Or divide the batter into separate bowls for as many fillings as you choose.

Fill the muffin pan cups up ¾ of the way and bake in the oven for 17-20 minutes or until ready.
