Peanut Butter No-Bake Cookies

This simple classic peanut butter no-bake cookies recipe is easy to make with few ingredients. Rich with peanut butter flavor and packed with old fashioned oats.

When the kids were little they loved to bake with me, and cookies were always our go-to baking adventure. To this day my girls still love to bake with me or on their own.

These cookies are one of our favorites to make because they are quick to make and loaded with peanut butter goodness. Some of our other favorites are Chocolate No-Bakes, Chocolate Chip Cookies, and Peanut Butter Cookies

What Ingredients Are Needed For Peanut Butter No-Bake Cookies?

These cookies are so simple to make and only take a few ingredients. Here is what you will need to make these oatmeal no-bakes.

  • Sugar
  • Milk
  • Butter (at room temperature)
  • Peanut Butter
  • Old Fashioned Oats (can use quick oats if you like)
  • Vanilla Extract

The tools you need are:

  • Saucepan
  • Spoon
  • Liquid Measuring Cup
  • Dry Measuring Cup
  • 1-inch Ice Cream Scoop (for scooping the batter into cookie shape)
  • Wax paper (for the cookies to cool on)

I like to have all the ingredients measured out before I start to make the cookies. This helps for a couple of reasons.

The first reason is so you know if you have all the ingredients that are needed for the cookies.

The other is because when the mixture is done boiling you will need to add the peanut butter in as soon as you can. If you have to measure the p.b. out then you risk the batter not being warm enough to melt the p.b.

How To Make No-Bake Cookies

Once you have all the ingredients measured out. Get a medium-sized saucepan out. I prefer to use non-stick but have used my stainless steel saucepan.

I feel with a non-stick saucepan there is less of a chance of burning the cookie mixture when it is boiling.

To the saucepan add the sugar, butter, and milk. Mix these ingredients together over medium-high heat.

You will need to continually stir this mixture so it doesn't burn.

As the butter and sugar melt they will become a liquid.

The liquified sugar, butter, and milk mixture will start to boil. Once it reaches a full rolling boil you will need to boil like this for one full minute.

Boiling The Cookie Mixture

The mixture will need to come to a rolling boil first before you start the timer for 1 minute.

I like to set a timer on the microwave so I know that it's boiled for a minute. If you don't let it boil for a minute you take the chances of the cookies not setting up.

Now that the mixture has boiled for a full minute remove from heat. I like to add the vanilla extract at this time.

Next, add the peanut butter and stir until its completely melted. It will be really smooth and a pretty peanut butter color.

As you stir the p.b. in you will notice the mixture to get thicker. The p.b. is what helps the cookies set up as well as cool the mixture down a bit.

For the oatmeal, I like to use old fashioned oats but have used the quick oats when I didn't have the old fashioned oats. I feel the old fashioned oats make this a heartier cookie.

Stir in the whole amount of oats into the melted mixture. Making sure that all the oats are combined.

One of my tips when making cookies is to use a 1-inch ice cream scoop for the perfect size cookies.

When making no-bake cookies I like to use wax paper to place the scooped out cookies onto.

Scoop the peanut butter no-bake cookies out onto the wax paper and let set up. This will take about 15-30 minutes.

How do I know if the cookies are set up? They will be firm when touching them or they will break in half if you try. They are a softer cookie because of the peanut butter.

How long do I boil the mixture for? You will need to boil the mixture for 1 full minute. The mixture will need to come to a rolling boil first before you start the timer for 1 minute.

What happens if I don't boil them long enough? If you don't boil the mixture long enough the cookies will not set up and they will look gooey.

How long will no-bake cookies keep for? No-bake cookies will store for up to 1 week in an airtight container.

Can you freeze no-bake cookies? Yes, you can, they will last in an airtight container in the freezer up to 3 months.

Peanut Butter No-Bake Cookies

Ingredients

  • 2 Cups Sugar
  • ½ Cup Milk
  • ½ Cup Butter room temperature
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Peanut Butter
  • 3 Cups Old Fashioned Oats

Instructions

  1. Gather all your ingredients and measure everything out. Place a sheet of wax paper on your countertop.

  2. In a medium saucepan add the sugar, milk, and butter and heat over medium-high heat. Making sure to stir the ingredients until all are melted.

  3. Bring the mixture to a full rolling boil and continually stir for 1 full minute.

  4. Remove from heat and add vanilla extract and peanut butter in. Stir until the peanut butter has melted and is completely smooth.

  5. Stir in the measured out oats until combined.

  6. Using a 1-inch ice cream scoop, scoop out the cookie mixture out onto the wax paper.

  7. Allow to set up anywhere from 15-20 minutes. The cookies will firm up the longer they are cooled.

Cookies may be store in an air tight container in the refrigerator up to 1 week. They will also freeze well up to three months.
