Pressure Cooker Chicken and Rice

Tender chicken breast and rice are mixed into a creamy sauce for this pressure cooker chicken and rice recipe. Our family has enjoyed Chicken And Rice casserole that's baked in the oven for years. But now making it in the Instant pot makes it a quick and easy chicken dinner recipe that can be enjoyed during the week.

I love how much easier weeknight cooking can be using my Instant Pot. My pressure cooker has become one of my favorite cooking tools to use.

I posted on my Instagram once about using my IP about 2-3 times a week. I was quickly corrected by my family saying I use it more like 4-5 times a week. Okay, I guess I didn't realize how often I did cook in my Instant Pot. I truly love my Instant Pot and want to share all my great recipes with you all.

Chicken And Rice Recipe

I wanted to talk to you all about the rice that I use in my Instant Pot. Before I started making rice in my IP I just used the instant type. I have read somewhere that you shouldn't use instant rice in your Instant Pot. That the rice gets soggy, now I can't attest for that because I haven't used instant rice in my IP.

I did find this royal blend from Rice Select that I love. It cooks up perfectly and my family all loves the flavor. It does cost a little bit more than instant rice but I feel it's well worth the extra cost.

Adding The Ingredients To The Instant Pot

The ingredients you will need to make this recipe are.

Chicken Broth~ you could use water and then use a paste type of bouillon like Better Than Bouillon. I changed to using this bouillon before I bought my IP and have loved it.

So when I joined some Instant Pot groups on Facebook and was reading that others were using Better Than Bouillon. I figured I was on to something that could save me money instead of buying chicken broth all the time. Of course, making my own bone broth is even a better way to say on money.

Chicken breast~ I used 4 rather large breasts for this recipe.

Italian Seasoning~  I like using McCormick perfect pinch Italian seasoning.

Rice~  I recommend this royal blend it has a great flavor. But please note that I don't recommend using instant rice.

Cream of Chicken Soup~ You can use whatever brand you want, I used my local store brand.

Cream Cheese~ Adding cream cheese to this chicken and rice recipe gives it a nice creaminess.

I added all the ingredients into my pressure cooker as I have them listed. Do not stir at this point. Adding the ingredients the way I have them listed helps to not get that dreaded burn on your Instant Pot on the display screen.

How Long Should I Cook Chicken And Rice For

Once I have added all the ingredients as I have them listed, it's time to set the cooking time. Push the Pressure Cooker button and adjust the minutes to 25, make sure you push the high-pressure button also.

Once your Instant Pot comes to pressure and does the 25 minutes of cooking, let it natural release for 10 minutes.A natural release is when you let the pressure naturally release from the Instant Pot.

Once the 10 minutes are up there may be some pressure still in the IP so you will need to move your release valve to open. Be careful of any steam that comes out, it can cause a burn.

Removing the lid from the IP, I will give the Chicken And Rice a little stir. Next, you can shred the chicken. I shred it up quite a bit this way there is some chicken in every bite.

Pressure Cooker Chicken and Rice

Pressure Cooker Chicken and Rice is a simple recipe that can be made in an Instant Pot. Perfect texture to the rice, fall part chicken all in a creamy sauce

Ingredients

  • 3 Cups Chicken Broth
  • 4 large Chicken Breast
  • 2 Tablespoon Italian Seasoning
  • 2 Cups Rice I used Rice Select Royal Blend
  • 1 Can Cream of Chicken Soup
  • 8 Ounces Cream Cheese

Instructions

  1. Add the chicken broth to the inner pot of your pressure cooker.

  2. Place the 4 large chicken breast whole into the inner pot. 

  3. Sprinkle the Italian seasoning over the chicken breast.

  4. Pour the 2 cups of rice over chicken breast

  5. Add the cream of chicken soup

  6. Place the cream cheese on top of the rice

  7. Place lid on the Instant Pot

  8. Push the pressure cooker button, set the timer for 25 minutes. Make sure that your Instant Pot is also set to high pressure. 

  9. Once cook time is done let natural release for 10 minutes. 

  10. If there is still pressure in your IP let the rest out. 

  11. Shred the chicken up 

  12. Stir all ingredients together and serve 

Recipe Notes

The nutrition value may vary depending on the ingredients used. 

Make sure not to stir the ingredients together before cook time. This will cause a burn to come up on your cook screen
