I like to start with this step and then allow it to sit as I'm prepping the rest of the ingredients. That way if all the sugar hasn't quite dissolved, it will settle on the bottom of the mixing bowl. Then I know I need to mix it more.

Peel and slice the crisp cucumbers thinly, I used a crinkle cutter to make mine a bit fancier looking. This was my personal preference, a sharp knife or mandoline slicer will work just as well.

Then combine the sliced cucumbers and red onion in a large bowl, and pour the vinegar mixture over them. This is when I like to add in salt and pepper, this is optional. You could also add a pop of color with some fresh chopped cilantro, or spice it up a bit with some red pepper flakes. Toss the cucumbers and onions until well coated and let marinate for at least 20 minutes before serving.

When you are ready to serve, give the salad a quick toss of the cucumbers in the tangy vinegar dressing to redistribute the flavors. Then transfer cucumbers and onions to a medium bowl. Ingredients

  • 5 Large Cucumbers
  • 1 Medium Red Onion
  • 1 Cup Apple Cider Vinegar
  • ½ Cup Granulated Sugar
  • ½ Cup Water
  • 1 Teaspoon Salt optional
  • 1 Teaspoon Black Pepper optional

Instructions

  1. Peel and slice the cucumbers into thin slices and place into a large bowl.

  2. Cut the red onion in half then slice into think half moon slices. Place into bowl with cucumbers.

  3. In a medium size mixing bowl combine the apple cider vinegar, sugar, and water. Mixing until sugar desolves.

  4. Pour the vinegar dressing over the cucumbers and onion. Stir until the cucumbers and onions are coated in the dressing.

  5. Season with salt and black pepper.

  6. Cover with plastic wrap and refrigerate for 20 minutes.

  7. Remove cucumbers from the marinade using a slotted spoon before serving.
