Since Valentine's Day is right around the corner I was thinking I wanted a red color cookie. So with these cookies, I went with a box of red velvet cake mix. The cake mix is where you can really change it up. We have a similar recipe for strawberry cake mix cookies that you may also enjoy.
I have used Betty Crocker and Duncan Hines to make these chewy cookies. However, you can use whichever cake mix you prefer. Now that we have the cake mix we need some vegetable oil, 2 large room temperature eggs, and some white chocolate chips.
Into a large mixing bowl add the cake mix, oil, and two large eggs. I use my stand mixer to mix this easy recipe together but a hand mixer will also work. Mix all the ingredients until everything is combined.
Fold in the white chocolate chips using a rubber spatula. I like to reserve the ¼ cup of chocolate chips to place on top of the cookie before baking. Scoop the cookie dough out using a medium-sized cookie scoop. Or scooping two tablespoons of cookie dough out and forming a dough ball.

Place cookie dough onto a prepared cookie sheet pan. I like to use silicone liners or parchment paper to keep my cookies from sticking to the baking sheet pan.

The liners help the cookies from sticking to the sheet pan. Then there is no need for cooking spray that builds up on the sheet pans over time.
I use a medium sized cookie scoop for these cookies but you could use a small cookie scoop. The baking time would need to be adjusted for smaller sized cookies.
Recently I have been making sure when I bake cookies to use room temperature eggs. Just like room temperature butter, eggs that are at room temperature blend more evenly into batters.

In a large bow or the bowl of a stand mixer add in the cake mix, oil, and room temperature eggs. Mix until all ingredients are combined.

Using a rubber spatula fold in 1 cup of white chocolate chips, reserving the ½ cup.

Using a cookie scoop or scooping 2 tablespoons of cookie dough out onto a prepared cookie sheet pan.

Place the reserved ¼ cup of white chocolate chips on top of the scooped cookie dough.

Place the cookie sheet pan into a preheated 350 ℉ oven and bake for 10-12 minutes. Or until the tops of the cookies look set.
