What is a Scotcheroo you might ask? A Scotcheroos is a fancy Rice Krispies treat that has melted chocolate and butterscotch chips on top of them.

These no-baked treats are just as much of a hit in my house as my No-Bake Chocolate Cookies are. So when we want a treat but I don't feel like baking these quick and easy no-bake treats are my go-to.
Chocolate Covered Rice Krispie Treats
Scotcheroos are simple to make but not simple on taste. These yummy treats will have your family asking you to make them all the time.
They are rice Krispie treats with a little extra yum to them. Because they have a delicious mix of chocolate and butterscotch melted on the top of them. Let me show you how I make them.
In a large saucepan add light corn syrup and sugar. Cook over medium heat, making sure to stir frequently, until the sugar dissolves and mixture starts to boil.
Remove the saucepan from the heat and stir in the peanut butter. Make sure the peanut butter is completely melted before adding the Rice Krispies.
Mix all the ingredients until well combined. Then press the base of the treats into a 9x13 baking dish.
Melting Chocolate and Butterscotch
In my Chocolate Peanut Butter Chip Cookie recipe, I talked about how I melt chocolate in a double boiler. I find that melting chocolate this was is so much easier than melting it in the microwave.
All you need for a double boiler is a heat safe bowl and a saucepan. Make sure the bowl is a bit bigger than the saucepan. You want the bottom of the bowl to get the heat from that water that is in the saucepan.
Add enough water into the saucepan then place the bowl on top of the pan. Add the chocolate and butterscotch chip into the bowl. Turn the heat on the burner to medium-low.
As the water comes to a boil it heats the chocolate and butterscotch up, they will start to melt.
Once the chocolate and butterscotch are fully melted pour over the cereal mixture that is in the 9x13 baking dish and spread evenly. Let stand until the chocolate has firmed, cut and serve.
Tips
An angled icing spatula helps spread the melted chocolate evenly over the cereal mixture. Making it easier to cover all the cereal mixture.
When measuring out corn syrup if you coat your measuring cup with cooking spray. The corn syrup will come out of the measuring cup easier.
Super hot water sprayed in the measuring cup helps make clean up easier. I do this right away so there is no time for the corn syrup to get stuck to the cup.
Placing the prepared treat into the refrigerator for 10-15 minutes helps set the chocolate up.
I don't recommend leaving them in the refrigerator for too long or they will become very hard.

Scotcheroos Cereal Bar
Chocolate covered Scotcheroos recipe that is made with rice krispies, peanut butter, corn syrup, sugar, chocolate and butterscotch chips.
Ingredients
- 1 Cup Light Corn Syrup
- 1 Cup Sugar
- 1 Cup Peanut Butter
- 6 Cups Rice Krispies cereal
- 1 Cup Semi Sweet Chocolate Morsels
- 1 Cup Butterscotch Chips
Instructions

Add corn syrup and sugar into a large sauce pan. Cook over medium high heat, making sure to stir frequently, until sugar dissolves and mixture begins to boil.

Remove pan from heat and stir in peanut butter. Make sure peanut butter is completely dissolved before adding cereal in.

Add the cereal into the peanut butter sugar mixture and combined. Press the cereal mixture into a 9x13 baking dish. Set aside.

In a double boiler melt the chocolate and butterscotch chips.

With the chocolate and butterscotch chips melted pour over cereal mixture. Spread evenly over all the cereal mixture.

Let stand or refrigerate for 10-15 minutes until treats firm up.

Cut into 2x1 inch squares and serve.
