With strawberry season right around the corner, I have been dreaming of strawberry recipes. This jello poke cake has been at the top of my list to make and enjoy. A moist white cake is filled with strawberry jello and then topped with cool whip and freshly sliced strawberries. You are going to want to cut yourself an extra large slice of this delicious dessert.
How To Make
This dessert recipe is simple to make with few ingredients. The traditional recipe calls for you to follow the directions on the back of the cake mix. We decided to change that recipe up a bit by adding milk instead of water into the cake mix. This will help to make the cake even moister.
The cake mix I used called for 3 eggs and that is what I used. However, I do know some cake mixes only call for 2 eggs but would still use 3 eggs. This will help to add to the moistness of the cake as well. We also added a splash of vanilla extract into the cake batter to enhance the flavor. I only had imitation vanilla extract on hand so that is what I used.
Pour the cake batter into a 9x13 baking dish that has been sprayed with cooking spray. A glass or metal baking dish will work, the baking time may need to be adjusted for a metal dish.
Once the cake has fully baked remove it from the oven and let cool for 30 minutes on a cooling rack. Using the handle of a wooden spoon, poke holes all over the cake. Yup this is why it's called poke cake.
Mix together the strawberry jello with boiling hot water until the jello is dissolved. I did this in my liquid measuring cup, this helps when pouring the jello onto the cake and filling the holes. Let the jello poke cake chill in the fridge for 1 hour. Then top with cool whip and fresh sliced strawberries.
Variations And Tips
Not only do I love sharing recipes you with all but I also love to share tips and variations that can be made to our recipes. So here are some variations and tips for this strawberry jello poke cake.
The first variation would be the cake itself. You don't have to use a white cake you could use a yellow or angel food cake mix. A chocolate cake would also be amazing with the strawberry jello. You could also make a cake from scratch. I wanted this poke cake recipe to be quick, that is why I used a box cake mix.
Another variation would be the jello. You can change out the strawberry jello for raspberry, cherry, lemon, or just about any flavor jello you like. Blue raspberry would be amazing to use for this jello poke cake recipe.
Next would be the cool whip. I used store bought cool whip but homemade is also a great option. Or whip up our cream cheese frosting recipe to spread on top.
Tips for storing this strawberry jello poke cake. Since we are topping the cake with cool whip I do recommend that it is stored in the refrigerator. It should last refrigerated for about a week. Just make sure to cover it with plastic wrap before storing it in the refrigerator. This will help the cake from drying out.

Ingredients
Cake Layer
- 15 Ounce White Cake Mix
- 3 Large Eggs
- ½ Cup Vegetable Oil
- 1 Teaspoon Vanilla Extract
- 1 Cup Milk
Strawberry Layer
- 3 Ounce Strawberry Jello
- 1 Cup Boiling Water
Topping Layer
- 8 Ounces Cool Whip Thawed
- 3-4 Fresh Strawberries sliced for garnish
Instructions
Cake Layer

Preheat Oven to 350℉, spray a 9x13 baking dish with cooking spray. Set aside.

Into a large bowl or the bowl of a stand mixer add in the cake mix, eggs, vegetable oil, vanilla extract, and milk. Mix until all ingredients are combined.

Pour into the prepared baking dish and bake for 30 minutes or until a toothpick comes out clean.

Let cool for 30 minutes then poke holes all over the cake with the end of a wooded spoon.
Strawberry Layer

Mix together the jello and boiling water in a mixing bowl until the jello is dissolved

Pour the jello mixture carefully over the cake evenly.

Cover with plastic wrap and chill in the refrigerator for a few hours until jello sets up.
Topping Layer

Once the jello is set, top the cake with thawed cool whip and sliced strawberries.
