In this section, we are going to talk about the ingredients that are needed to make this moist quick bread. Along with what each of the ingredients does for the recipe along with any substitution that can be made.

  • All Purpose Flour is the main structural component of this bread recipe. It provides the necessary gluten which gives the bread its texture and holds it together. Alternatives like whole wheat flour, almond flour, oat flour, or gluten-free flour blends will work.
  • Baking Soda acts as a leavening agent to help the bread to rise and become light and fluffy during baking.
  • Baking Powder is also a leavening agent in this quick bread recipe. Unlike baking soda, baking powder contains both an acid and a base. Which produces a carbon dioxide gas, and that's what helps the bread to rise and creates a light and fluffy texture.
  • Salt enhances the overall flavor of the bread, it can be left out. The flavor and the structure of the bread may be affected by leaving it out.
  • Vegetable Oil provides moisture to the bread which helps to keep it soft and tender. It can be replaced with melted butter, melted coconut oil, or even applesauce.
  • White Sugar adds a sweetness to the bread which enhances the overall flavor. It also helps with the overall moisture of the bread by helping to keep it soft and tender. Alternatives like brown sugar, honey, maple syrup, or agave nectar can be used but keep in mind these may bring a different flavor and texture to the strawberry banana bread.
  • Large Eggs are the binding agent as well as adds moisture to the bread.
  • Milk adds a bit more moisture, flavor, and helps with the texture of the bread. Yogurt, sour cream, or dairy-free milk would be a good alternative.
  • Vanilla Extract enhances the overall flavor of the bread.
  • Overripe Bananas give the strawberry banana bread its flavor.
  • Fresh Ripe Strawberries also add a natural sweetness to the bread but of course, can be left out or replaced with another fruit of your choice.

How To Make

Now let's get to making this delicious bread recipe. Whenever baking I always start by getting the oven preheated, that way what I'm baking will bake correctly. For this bread recipe, the oven needs to be at 350 degrees.

Looking into a mixing bowl that has the wet ingredients and some of the dry ingredeints in it to make this strawberry banana bread recipe.

In a medium bowl sift together the flour, baking soda, baking powder, and salt. Set this aside and get a large bowl or in the bowl of a stand mixer.

Add the mashed bananas, veggie oil, eggs, sugar, milk, and vanilla extract mixing until combined. Then slowly add the dry ingredients to the wet ingredients until all the flour mixture is combined.

Coat the cut fresh strawberries in flour then gently fold them into the banana bread batter. Pour the batter mixture into the prepared pan. I like to split this into two 5-inch loaf pans but you can use one.

However, the baking time will need to be adjusted. For additional strawberry flavor, you can sprinkle more fresh berries on top of the batter before placing in the oven.

Place the prepared pans into the preheated oven and bake for 40-50 minutes or until fully baked. Use the toothpick method to check for doneness in the center of the bread.

Tips And Tricks

Now we are going to talk about some tips and tricks for making this delicious strawberry banana bread.

For best results, I like to use overripe bananas with brown spots on the banana. They are sweeter and have a stronger banana flavor which enhances the taste of the bread.

I have used both fresh and dried strawberries, even though the fresh berries lose their vibrant red color. They bring a much sweeter fresher taste to the bread unlike the dried one. Dried strawberries do work they just have a different texture to them.

Definitely no matter which type of strawberries you use coat them in flour before adding them to the batter. This will help the berries from sinking to the bottom of the loaf. Sprinkling more on top of the loaf will add to the overall look of the bread.

Be careful to not overmix the batter, this could lead to a tough and dense bread. Allow the bread to cool on a wire rack for 10-15 minutes before cutting into it. Warm strawberry banana bread is absolutely delicious any time of the day.

Once the bread is completely cooled store it in an airtight container or wrapped in plastic wrap at room temperature for 2-3 days. It will last 5-7 days stored in an airtight container in the fridge. Or you can freeze the bread up to three months.

Ingredients

  • 2 Cups All Purpose Flour
  • 1 Teaspoon Baking Soda
  • ½ Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • ½ Cup Vegetable Oil
  • 1 Cup Sugar
  • 2 Large Eggs slightly beaten
  • 3 Tablespoon Milk
  • 1 Teaspoon Vanilla Extract
  • 3 Large OverRipe Banana Mashed
  • 1½ Cups Fresh Strawberries chopped
  • 1 Tablespoon All Purpose Flour this is to coat the berries with

Instructions

  1. Preheat oven to 350℉ Spray 2 loaf pans with nonstick cooking spray and set aside.

  2. In a medium mixing bowl sift together the flour, baking soda, baking powder, and salt. Set aside.

  3. In a large mixing bowl or the bowl of a stand mixer add in the vegetable oil, sugar, eggs, milk, vanilla extract, and mashed bananas. Beat until ingredients are combined.

  4. Slowly add in the dry ingredients into the wet ingredients until all is combined. Be careful to not over mix the batter.

  5. Coat the cut strawberries in a dusting of flour then gently fold them into the banana bread batter.

  6. Pour half of the batter mixture into each of the prepared loaf pans. Place into the preheated 350 degree oven and bake for 40-50 minutes. Or until toothpick comes out clean when inserted into center of bread.
