How To Make
This chocolate caramel poke cake recipe is simple to make. Grab your favorite box of cake mix, I used Betty Crockers devil's food cake mix. Make the cake according to the package directions.
While the cake is baking mix together sweetened condensed milk and caramel syrup. I like to mix these two ingredients in a liquid measuring cup however, a large mixing bowl will also work. I find the measuring cup makes it easier to fill the holes of the cake with the sweetened caramel sauce.
With the handle of a wooden spoon poke holes in the cake. Only go about three-quarters of the way through the cake when poking the holes. Then pour caramel sauce into the holes. I like to fill all the holes then go back and top them off more, I will also drizzle a bit of the sweetened sauce on top of the cake.
Place the chocolate poke cake recipe into the refrigerator for ten minutes to allow the sweetened caramel sauce to set up some.
After the cake has cooled a bit add thawed whipped topping to the top. Next, drizzle a bit of chocolate and caramel syrup on top of the whipped topping. Sprinkle chopped pecans and mini chocolate chips to finish this chocolate caramel poke cake off. Before serving, place in the refrigerator for two hours to set completely.
Serve this chocolate turtle poke cake recipe with a scoop of vanilla ice cream or even caramel ice cream.

The cake can be made up to 3 days ahead of the desired time as long as it's stored in an airtight container in the refrigerator. I wouldn't poke the hole into the cake or top of the cake with the cool whip and toppings until needed though.
Tips
It's best to store this in the refrigerator covered with plastic wrap or stored in an airtight container. Turtle chocolate poke cake will last stored in the refrigerator for 2-3 days. That is if it doesn't get eaten right away, I have a fan of chocolate turtles in my home and this cake doesn't seem to last longer than 2 days tops.
Change up the whipped topping for chocolate frosting. Or add a bit of cocoa powder to the whipped topping for more sweetness to this turtle cake. A splash of vanilla extract could really enhance either the cake itself or the whipped topping.
