I don't know about you but I'm a huge fan of coconut and cookies, so why not have them together. Get ready I'm going to share with you how I made these delicious cookies.
Like with all my baking I started off with sifting the 2 cups of flour, 1 teaspoon of Baking Powder, and ½ teaspoon salt into a small bowl. With that being sifted, I sat the flour mixture aside.
Adding Butter Into The Cookies
I placed 1 cup unsalted butter and ¾ cup sugar into my mixer. As the butter and sugar were mixing I added 1 egg, 1 teaspoon vanilla extract, and 1 teaspoon coconut extract.
You can always eliminate the coconut extract if you would like, I think it brings more of the coconut flavor into these cookies.
White Chocolate Coconut Cookies
Once the butter mixture is ready I slowly added the flour mixture into the mixer.
Having all the flour and butter mixed together I added 1 cup white chocolate chips and ½ cup shredded coconut flakes.
Mixed these all in and start to form small balls. I placed the cookie balls on to a prepared baking sheet, then pressed the cookie ball down a bit.
Placing in a 350-Degree oven for 15-18 minute or until golden brown. This batch makes about 17 cookies
