This simple classic peanut butter no-bake cookie is easy to make with few ingredients. Rich with peanut butter flavor and packed with old fashioned oats.
Gather all your ingredients and measure everything out. Place a sheet of wax paper on your countertop.
In a medium saucepan add the sugar, milk, and butter and heat over medium-high heat. Making sure to stir the ingredients until all are melted.
Bring the mixture to a full rolling boil and continually stir for 1 full minute.
Remove from heat and add vanilla extract and peanut butter in. Stir until the peanut butter has melted and is completely smooth.
Stir in the measured out oats until combined.
Using a 1-inch ice cream scoop, scoop out the cookie mixture out onto the wax paper.
Allow to set up anywhere from 15-20 minutes. The cookies will firm up the longer they are cooled.
Cookies may be store in an air tight container in the refrigerator up to 1 week. They will also freeze well up to three months.
