Loaded Mashed Potatoes

Sour cream makes these mashed potatoes creamy. Loaded with bacon, green onion and cheese make for the best loaded mashed potatoes recipe.

Ingredients

  • 6 Large Potatoes peeled and diced into cubes
  • 3 Cups Water
  • 2 Strips Bacon Cooked
  • ½ Cup Sour Cream
  • ¼ Cup Butter
  • ¼ Cup Green Onions
  • ½ Cup Colby Jack Shredded Cheese
  • ¼ Cup Colby Jack Shredded Cheese To sprinkle on top
  • Salt To taste
  • Black Pepper To taste

Instructions

  1. Preheat oven to 350℉

  2. Peel the potatoes then dice them into cubes. Place into a medium-sized saucepan.

  3. Add enough water to the pan so that the potatoes are covered with the water. Place on the stove and boil until the potatoes are fork-tender.

  4. Cook bacon to desired crispiness, see post for how I cook the bacon. Cut the bacon into bite-sized pieces, set aside.

  5. Dice the green onion into a small size, set aside.

  6. Spray 9x13 baking dish with cooking spray and set aside.

  7. Once the potatoes are fork-tender drain the water.

  8. Using a hand mixer start whipping the potatoes, add butter until smooth.

  9. Add the sour cream into the potatoes and mix until the sour cream is incorporated completely.

  10. Add the bacon, ½ cup cheese, green onion, salt, and black pepper. Stir by hand until all ingredients are incorporated.

  11. Spread into prepared 9x13 baking dish, sprinkle ¼ cup of Colby jack cheese on top of mashed potatoes.

  12. Cover with foil and back in a 350℉ Oven fro 1 hour.

  13. Server and enjoy.
