Sour cream makes these mashed potatoes creamy. Loaded with bacon, green onion and cheese make for the best loaded mashed potatoes recipe.
Preheat oven to 350℉
Peel the potatoes then dice them into cubes. Place into a medium-sized saucepan.
Add enough water to the pan so that the potatoes are covered with the water. Place on the stove and boil until the potatoes are fork-tender.
Cook bacon to desired crispiness, see post for how I cook the bacon. Cut the bacon into bite-sized pieces, set aside.
Dice the green onion into a small size, set aside.
Spray 9x13 baking dish with cooking spray and set aside.
Once the potatoes are fork-tender drain the water.
Using a hand mixer start whipping the potatoes, add butter until smooth.
Add the sour cream into the potatoes and mix until the sour cream is incorporated completely.
Add the bacon, ½ cup cheese, green onion, salt, and black pepper. Stir by hand until all ingredients are incorporated.
Spread into prepared 9x13 baking dish, sprinkle ¼ cup of Colby jack cheese on top of mashed potatoes.
Cover with foil and back in a 350℉ Oven fro 1 hour.
Server and enjoy.
