Easy muffin recipe that tastes like a fried donut. These Cinnamon Sugar Donut Muffins are dipped in butter then coated in cinnamon and sugar.
Preheat Oven to 350℉
Spray mini muffin tin with cooking spray and set aside.
In a large bowl whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
Make a little well in the middle of the dry ingredients.
Add the vanilla, egg, milk, and melted cooled butter. Mix together with a hand mixer.
Spoon batter into prepared mini muffin tin with a tablespoon. Scrap the batter out of the tablespoon using a spoon. Batter should be about ½-3/4 of the way full in the mini muffin tin.
Place into the preheated 350℉ oven for 12 minutes or until the muffins feel firm.
Allow the mini muffins to cool for 5 minutes.
On a plate or wax paper mix together sugar and cinnamon.
In a small microwave bowl melt butter.
Doing one muffin at a time, dip a muffin in the butter then roll into the sugar-cinnamon mixture. Place on a plate to serve.
