These low-calorie eggs bites are the perfect addition for breakfast. Loaded with bell peppers and Canadain Bacon make them a nice treat for when you are heading out the door.
Spray the egg mold with cooking spray and set aside.
In the liquid measuring cup add the eggs. Whisk them with a fork until they look scrabbled.
Add the bell peppers, Canadain bacon, salt, and pepper into the eggs. Mix together.
Pour egg mixture into the prepared egg mold. If one egg bite looks like it has more meat or veggies than the other. Use a fork to remove some and add into another egg bite that might need more.
Place the egg mold on the trivet.
Pour the water into the inner pot of your Instant Pot.
Place the trivet with the egg mold inside the inner pot of your Instant Pot.
Place the lid on the Instant Pot and turn the release valve to sealing.
Press the pressure cook button and adjust the time to 10 minutes.
Once the 10 minute cook time has finished do a 10-minute natural release.
Remove trivet with egg mold from the inner pot.
Pop an egg bite out of the mold and enjoy.
