
This quick and simple recipe for Instant Pot Black Bean results in tender beans that are flavorful.
Rinse and sort out the broken black beans, allow the water to drain off the beans.
Press the sauté button on the Instant Pot when it reads hot add in the olive oil. Allow to heat up a bit before adding in the diced onion and minced garlic. Sauté the onion and garlic until translucent and fragrant. This will take about 1-2 minutes.
Once the onion and garlic is translucent add in the rinsed beans, salt, black pepper, bay leaf, vegetable broth, and water.
Place the lid on the pressure cooker and cook on high pressure for 30 minutes. It will take 10 minutes or so for the Instant Pot to come to pressure and start the cooking time.
Once the cooking time is up allow the Instant Pot to naturally release. When all the steam has naturally released carefully remove the lid from the Instant Pot.
You will want to remove the bay leaf and any of the extra cooking liquid. Serve and enjoy.
