
Instant Pot Pancake Bites are simple to make with few ingredients. Add blueberries or mini chocolate chips to these fluffy pancake bites.
Melt butter in a small bowl, set aside
In a larger mixing bowl mix together the egg and powdered sugar until combined.
Add the flour, baking powder, baking soda, salt, milk, vanilla extract, and melted butter into the egg mixture.
Mixing until all ingredients are combined.
Spay two egg molds with cooking spray and add 2 tablespoons of batter to each cup of the mold. Add any extras like chocolate chips or blueberries now. Making sure to sink them into the batter a bit.
Add 1 cup of water (or required amount for your Instant Pot) to the inner pot of your Instant Pot. Cover the egg molds with foil.
Place foil covered egg molds onto a trivet and place it into the inner pot.
Place the lid on the Instant Pot making sure the sealing value is set to sealing. Press the pressure cooker button and then adjust the cooking time with the plus and minus buttom to 14 minutes.
Once the 14 minutes of cooking time is done let the Instant Pot do a natural release for 5 minutes. (natural release is when the IP lets out the steam on its own) There will still be pressure inside the Instant Pot so turn the release valve to venting and release the remaining steam.
Remove the egg molds and enpoy the pancake bites.
