Mini Chocolate Chip Muffins

A moist little muffin full of chocolate flavor, these mini chocolate chip muffins are the perfect treat for any chocolate lover. To enjoy for breakfast or as an afternoon snack, skip the bakery in the morning and make your own mini muffins at home. These muffins are loaded with chocolate flavor in a bite sized form.

Ingredients

  • 2 Cups All Purpose Flour sifted
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • ¾ Cup Granulated Sugar
  • Cup Vegetable Oil
  • 1 Cup Milk
  • 1 Large Egg
  • 1 Teaspoon Pure Vanilla Extract
  • Cup Mini Chocolate Chips

Instructions

  1. Preheat oven to 375 degrees. Line muffin pan with muffin liners or spray with cooking spray. Set a side.

  2. In a medium mixing bowl sift together the flour, baking powder, and salt.

  3. Whisk or sift the sugar into the flour mixture until combined.

  4. Into a large mixing bowl or the bowl of the stand mixer add in the oil, milk, egg, and vanilla extract

  5. Slowly add the dry ingredients into the wet ingredients until combined.

  6. Using a rubber spatula fold in the chocolate chips.

  7. Using a small 1 inch cookie scoop or 1 tablespoon, fill the muffin liners with the muffin batter.

  8. Bake in the preheated 375 degree oven for 12-14 minutes. Let muffins cool in the muffin pan for 2 minutes then place onto a cooling rack.

  9. Store in an airtight container
