
These easy to make bacon, egg, and cheese biscuit sandwiches are a simple recipe to make. Making them perfect for busy mornings or for lazy weekends. These delicious breakfast sandwiches can be made ahead, making them perfect for meal prepping.
In a large mixing bowl combine the pancake mix and milk together until a soft dough forms.
Sprinkle pancake mix onto clean work surface sprinkle a bit of pancake mix. Knead the biscuit dough for 12-13 times.
Roll dough out to ½ -1 inch thickness, and cut with a round biscuit cutter.
Place on sheet pan, place into preheated 400 degree oven. Bake for 1-12 minutes or until golden brown on top.
Cook the bacon either in a frying pan or in the oven until the bacon is crispy. Remove the bacon from the baking vessel and place on a paper towel lined plate.
In a large bowl whisk together the eggs, milk, salt, and pepper until light and fluffy looking.
Pour the egg mixture into a large skillet and cook until the eggs are fully cooked.
Assemble the breakfast sandwiches by splitting the biscuits open.
Onto the bottom of each of the biscuits add a slice of cooked bacon. Add a helping of eggs on top of the bacon, and place a slice of cheese on top of the warm eggs. Add the top of the biscuit on top of the cheese. Enjoy
