Bacon, Egg, And Cheese Biscuit Sandwiches Recipe

These easy to make bacon, egg, and cheese biscuit sandwiches are a simple recipe to make. Making them perfect for busy mornings or for lazy weekends. These delicious breakfast sandwiches can be made ahead, making them perfect for meal prepping.

Ingredients

Biscuits

  • 2 ¼ Cup Pancake Mix
  • Cup Milk
  • 2 Tablespoons Melted Butter

Bacon, Eggs, And Cheese Part

  • 6 Slices Bacon I used thick cut bacon
  • 8 Large Eggs
  • ¼ Cup Milk
  • ¼ Teaspoon Salt or to taste
  • ¼ Teaspoon Black Pepper or to taste
  • 6 Slices American Cheese or your preferred cheese

Instructions

Biscuits

  1. In a large mixing bowl combine the pancake mix and milk together until a soft dough forms.

  2. Sprinkle pancake mix onto clean work surface sprinkle a bit of pancake mix. Knead the biscuit dough for 12-13 times.

  3. Roll dough out to ½ -1 inch thickness, and cut with a round biscuit cutter.

  4. Place on sheet pan, place into preheated 400 degree oven. Bake for 1-12 minutes or until golden brown on top.

Bacon, Eggs, And Cheese Part

  1. Cook the bacon either in a frying pan or in the oven until the bacon is crispy. Remove the bacon from the baking vessel and place on a paper towel lined plate.

  2. In a large bowl whisk together the eggs, milk, salt, and pepper until light and fluffy looking.

  3. Pour the egg mixture into a large skillet and cook until the eggs are fully cooked.

  4. Assemble the breakfast sandwiches by splitting the biscuits open.

  5. Onto the bottom of each of the biscuits add a slice of cooked bacon. Add a helping of eggs on top of the bacon, and place a slice of cheese on top of the warm eggs. Add the top of the biscuit on top of the cheese. Enjoy
