
Soft and delicious coconut pecan cookies with chocolate chips. These sweet treats make for the perfect afternoon sweet treat with a glass of milk.
Preheat oven to 375 ℉ prepare baking sheet with either silicone liners or parchment paper.
Into a large mixing bowl or the bowl of a stand mixer combine the butter, granulated sugar, and brown sugar until light and fluffy.
Add in the eggs and vanilla extract.
Into a medium bowl sift together the flour, baking soda, and salt.
Slowly add the sifted dry ingredients into the wet ingredients until all are combined.
Using a rubber spatula mix in the chopped pecan, coconut, and chocolate chips until even dispursed.
Using a large cookies scoop, scoop out the cookie dough and place on prepared baking sheet pan.
Place sheet pan into the preheated 375-degree oven on the middle rack for 12-14 minutes.
Remove the sheet pan from oven and allow the cookies to sit on the warm sheet pan for 5 minutes. The cookies will finish setting up on the warm sheet pan.
Place cookies on a wire cooling rack to finish cooling.
