Ingredients

  • ½ Cup Onion diced
  • 2 Large Carrots peeled and diced
  • 2 Stalks Celery diced
  • 2 Medium Zucchini diced
  • 1 Large Yellow Bell Pepper cored and diced
  • 15.5 Ounces White Beans rinsed and drianed~ cannellini or great northern beans will work
  • ½ Cup Elbows
  • 1 Teaspoon Black Pepper or to taste
  • ½ Teaspoon Salt or to taste
  • 1 Teaspoon Italian Seasoning
  • 14.5 Ounces Diced Tomatoes
  • 15 Ounces Tomato Sauce
  • 4 Cups Vegetable Broth
  • 1 Large Bay Leaf
  • ¼ Cup Fresh Parsley chopped- optional
  • ¼ Cup Fresh Parmesan Cheese shredded-optional

Instructions

  1. Add all the ingredients into the Instant Pot except for the fresh parsley.

  2. Place lid on IP and close sealing valve.

  3. Press high pressure, adjust the cooking time to 8 minutes. It will take some time for the IP to come to pressure and then start the cooking countdown. Cooking time may need to be adjusted according to noodles used.

  4. Once cooking time is done, do a quick release. That means placing the release valve into releasing position. Remove the bay leaf from the soup.

  5. Once all the pressure has been released carefully remove lid. Add in the fresh parsley and stir well.

  6. Serve and enjoy.
