Fresh Avocado Shrimp Ceviche Recipe

Ingredients

  • 1 Pound Raw Shrimp chopped into small pieces
  • 3 Large Limes squeeze the juice from the limes
  • 2 Large Roma Tomatoes diced
  • ¼ Cup Red Onion diced
  • 1 Large Jalapeno Pepper diced small
  • ¼ Cup Fresh Cilantro chopped
  • 3 Large Avocados diced into small pieces
  • ¼ Teaspoon Salt or to taste
  • ¼ Teaspoon Black Pepper or to taste

Instructions

  1. Clean and devein the raw shrimp.

  2. In a large bowl add the chopped raw shrimp and fresh squeezed lime juice. Allow the raw shrimp to sit in the bowl of lime juice for 5-10 minutes. As the shrimp sits in the lime juice it will cook and turn pink.

  3. Add in the tomatoes, onion, jalapeno, and cilantro. Toss all the ingredients together, cover and place in the refrigerator for one hour.

  4. Add in the chopped avocados and toss all the ingredients together seasoning with salt and pepper.

Recipe Notes

You can use pre-cooked shrimp just skip the 5-10 minutes lime juice marinade step.
