Just imagine a hearty bowl of soup that's like a cozy hug on a chilly day. This Instant Pot stuffed peppers soup brings together tender ground beef, colorful bell peppers, rice, and a flavorful tomato broth in a snap. It's comfort food made easy and perfect for a quick and satisfying meal.
Set the Instant Pot to sauté and cook the ground beef along with the green peppers, onions, garlic powder, Italian Seasoning, salt, and black pepper. Until the ground beef no longer is pink.
Turn off the sauté mode on the Instant Pot. And drain any excess fat there might be in the bottom of the inner pot from the ground beef. Deglaze the bottom of the inner pot if needed with a bit of the beef broth.
Add in the tomato sauce, beef broth, and rice into the inner pot.
Add the lid to the Instant Pot, and turn the pressure valve to sealing. Press the pressure cook button and adjust the cooking time to 10 minutes.
Once the cooking time is up allow the pressure cooker to release the steam naturally for 5 minutes. Then turn the pressure valve to venting to remove any remaining steam.
Serve the soup garnished with fresh chopped parsley and enjoy.
