Red Velvet Cake Mix Cookies

Ingredients

  • 15.25 Ounce Red Velvet Cake Mix
  • Cup Vegetable Oil canola oil will work
  • 2 Large Eggs at room temperature
  • 1 ¼ Cups White Chocolate Chips reserve the ¼ cup to place on top of scooped cookie dough.

Instructions

  1. Preheat oven to 350 ℉

  2. In a large bow or the bowl of a stand mixer add in the cake mix, oil, and room temperature eggs. Mix until all ingredients are combined.

  3. Using a rubber spatula fold in 1 cup of white chocolate chips, reserving the ½ cup.

  4. Using a cookie scoop or scooping 2 tablespoons of cookie dough out onto a prepared cookie sheet pan.

  5. Place the reserved ¼ cup of white chocolate chips on top of the scooped cookie dough.

  6. Place the cookie sheet pan into a preheated 350 ℉ oven and bake for 10-12 minutes. Or until the tops of the cookies look set.

  7. Remove the cookie sheet pan from oven and allow the cookies to cool for 5 minutes on the pan before transferring to a wire cooling rack.
