Ingredients

  • 2 Cups All Purpose Flour
  • 1 Teaspoon Baking Soda
  • ½ Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • ½ Cup Vegetable Oil
  • 1 Cup Sugar
  • 2 Large Eggs slightly beaten
  • 3 Tablespoon Milk
  • 1 Teaspoon Vanilla Extract
  • 3 Large OverRipe Banana Mashed
  • Cups Fresh Strawberries chopped
  • 1 Tablespoon All Purpose Flour this is to coat the berries with

Instructions

  1. Preheat oven to 350℉ Spray 2 loaf pans with nonstick cooking spray and set aside.

  2. In a medium mixing bowl sift together the flour, baking soda, baking powder, and salt. Set aside.

  3. In a large mixing bowl or the bowl of a stand mixer add in the vegetable oil, sugar, eggs, milk, vanilla extract, and mashed bananas. Beat until ingredients are combined.

  4. Slowly add in the dry ingredients into the wet ingredients until all is combined. Be careful to not over mix the batter.

  5. Coat the cut strawberries in a dusting of flour then gently fold them into the banana bread batter.

  6. Pour half of the batter mixture into each of the prepared loaf pans. Place into the preheated 350 degree oven and bake for 40-50 minutes. Or until toothpick comes out clean when inserted into center of bread.
