Ingredients

  • 3 Large Potatoes Cooked~ See Notes for how to bake potatoes
  • ¼ Cup Milk
  • 2 Tablespoons Butter
  • ¼ Cup Green Onion Finely chopped
  • ½ Cup Shredded Colby Jack Cheese
  • 2 Slices Bacon Cooked and chopped~ See notes to see how to cook the bacon.
  • Black Pepper to taste
  • Salt to taste

Instructions

  1. Preheat Oven to 350℉

  2. With potatoes that have been baked and are cool enough to handle slice them in half.

  3. Place half potatoes onto a foil-lined cookie sheet.

  4. Using a spoon scoop out the inside of the potato and place the insides into a mixing bowl. Leave enough of the potato attached to the skin so the shell of the potato doesn't collapse.

  5. Salt and pepper to taste the inside of the potato.

  6. Into the mixing bowl that has the potato insides add milk, butter, black pepper, and salt. Mash together using a fork.

  7. Chop the bacon and green onion into finer bite-size pieces.

  8. Gently stir the green onion, bacon, and ¼ cup of the Colby jack cheese into the mashed potatoes.

  9. Spoon mixture into the shells of the potato and top with remaining Colby Jack cheese.

  10. With the prepared potatoes on a foil-lined cookie sheet place into the 350℉ preheated oven for 20 minutes.

  11. Serve and enjoy!
