Cinnamon Sugar Donut Muffin Recipe
Here is a list of the ingredients and tools that you will need to make these bite-size delights.
The ingredients you need are:
- all-purpose flour
- baking powder
- vanilla extract
- sugar for dipping
- cinnamon for dipping
- melted butter for dipping
The tools you will need are:
- preheated 350℉ oven
- mini muffin tin
- cooking spray
- tablespoon to scoop the batter into the muffin tin
- a spoon to help scoop the batter out of the tablespoon and into the muffin tin
- large bowl for mixing
- measuring cups and spoons
- rubber spatula
- hand mixer
- wax paper or plate
- small bowl
Now that you have all the ingredients and tools ready let's get started on how to make these donut muffins.
How To The Muffins
Whenever I'm going to be baking something my first step after I get all my ingredients out is to preheat my oven.

Once you have your oven preheating to 350℉, grab that mini muffin pan and cooking spray. Spray the mini muffin tin with cooking spray and set aside.
In a large bowl whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg. In this recipe, you will be using cinnamon twice, with this in mind make sure to only use ½ teaspoon at this step.
With the dry ingredients mixed together, you can start to add the wet ingredients. In this recipe, you will be also using melted butter twice. For this step, you will be using ⅓ cup of melted butter that is cooled.
I like to make a little well in the dry ingredients then start to add the vanilla extract, egg, milk, cooled melted butter.
Using a hand mixer, mix all the ingredients together. To make sure that all the ingredients get incorporated, use a rubber spatula and scrape all the batter off the sides of the bowl.
Grab that prepared mini muffin tin to begin filling it up. In order, to make the perfect sized donut muffin I used a tablespoon from my measuring spoons.
This is a sticky batter so in order to get the batter out of the tablespoon, I also used a spoon to scrape the tablespoon out.
Now that the muffin tin is filled up it's time to bake the mini donut muffins.
While The Mini Muffins Are Baking
While the mini muffins are baking you can start getting your cinnamon sugar coating ready.
I like to use wax paper for this step, however, you can do this on a plate. Add your extra sugar and cinnamon and mix together, set aside.
With the mini muffins fully baked remove them from the oven and let them cool enough in order to handle them.
While the muffins are cooling, in a small microwave-safe bowl melt the butter in the microwave.
Now for the fun part! Take a mini muffin and cover it in butter then roll the mini muffin into the cinnamon-sugar mixture.
Continue until you have coated all the muffins with butter and cinnamon-sugar.
Enjoy these bite-sized delights with a cold glass of milk or a steaming hot cup of coffee.
Tips For This Recipe
For this recipe, I only have a couple of tips that may be different than the tips from A Baker's Dozen article.
- The first one being, when you spray the mini muffin tin with cooking spray. I recommend doing this over the kitchen sink. Cooking spray on the kitchen floor can get very slippery, I may speak from experience on this.
- The second one would be even though I always recommend using cupcake liners when making muffins. This recipe is best not to use them. Rolling the whole mini muffin in butter and cinnamon sugar gives the muffin a more donut-like taste.

For the Muffin Batter
- 1 ½ Cups Flour
- ½ Cup Sugar

- 1 Large Egg
- ½ Cup Milk
- ⅓ Cup Butter Melted and cooled
For The Topping
- ⅓ Cup Sugar
- 2 Teaspoons Ground Cinnamon
- 5 Tablespoons Melted Butter Slightly cooled
Preheat Oven to 350℉
Spray mini muffin tin with cooking spray and set aside.
For The Muffin Batter
In a large bowl whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
Make a little well in the middle of the dry ingredients.
Add the vanilla, egg, milk, and melted cooled butter. Mix together with a hand mixer.
Spoon batter into prepared mini muffin tin with a tablespoon. Scrap the batter out of the tablespoon using a spoon. Batter should be about ½-3/4 of the way full in the mini muffin tin.
Place into the preheated 350℉ oven for 12 minutes or until the muffins feel firm.
Allow the mini muffins to cool for 5 minutes.
On a plate or wax paper mix together sugar and cinnamon.
In a small microwave bowl melt butter.
Doing one muffin at a time, dip a muffin in the butter then roll into the sugar-cinnamon mixture. Place on a plate to serve.
