Turn a box of angel food cake mix and a can of lemon pie filling into this easy lemon bar recipe. Just imagine bitting into a luscious lemony cake like bar that melts in your mouth.

These bars are bursting with citrus flavor and are the perfect balance of tangy and sweet. The best part is you don't need to be a master baker or spend hours in the kitchen to create this delightful dessert.

Whether you are a busy parent, a beginner in the kitchen, or simply crave a quick lemony fix. These 2-ingredient lemon bars are a game changer. So let's get ready to indulge in the incredible simplicity and incredible taste of these lemon squares.

Why This Recipe Works

The two ingredients needed to make easy lemon bars.

This two-ingredient lemon bars recipe works due to the clever use of premade box angel food cake mix and lemon pie filling.

This cake mix lemon bars recipe is incredibly convenient, especially for those who are short on time or prefer a simple baking process. By using a cake mix and pie filling, you eliminate the need to measure and combine multiple ingredients.

The angel food cake mix creates airy lemon bars with a spongy texture. The pie filling brings in that lemon flavor that you expect from a traditional lemon bar. Even though the recipe is simple and straightforward, it also allows for customization and creativity.

You can experiment with different flavors of cake mixes like a lemon cake mix or yellow cake mix. Bring in an even more big lemon flavor by adding in some lemon zest or fresh lemon juice.

How To Make

Making the best lemon bars is quite easy, into a large bowl add in the dry cake mix and lemon pie filling. Mix these two ingredients together until combined.

Spread the lemon bar batter into a 9x13 baking dish that has been coated with nonstick cooking spray. I always prefer to bake these lemon cake bars in my glass Pyrex pan. Place the baking dish into a preheat 350℉ oven and bake for 25-30 minutes. Or until the top of the cake is golden brown.

Once these simple ingredients are mixed together you will have a thick batter that is airy. These 2 ingredient lemon bars bake up with a cake-like texture. After the lemon squares are fully baked place the cake pan on a wire rack to fully cool.

To take these amazing lemon bars a step further sprinkle a little powdered sugar on top of this delicious dessert. Or top it with a dollop of cool whip and some fresh berries.

Questions

How to tell when lemon bars are done?

Here are a few indicators to help you know when the lemon bars are fully baked. The top and the edges of the bars will have a golden color. Give the baking dish a shake and see if the center of the bars jiggle. You will want the center to be set and firm, use the toothpick method to see if it comes out clean.

How to store lemon bars?

Once the bars are fully cooled cut them into squares and place them in an airtight container. I like to place parchment paper in between the layers of bars to help keep them from sticking together. They can be kept at room temperature for up to 2 days. Or store in the refrigerator for 4-5 days.

Can 2 ingredient lemon bars be frozen?

Yes, these 2 ingredient lemon bars can be frozen for up to 2-3 months if properly stored. Place the cooled lemon squares in a freezer-safe container. When ready to enjoy them thaw in the refrigerator overnight or at room temperature for a few hours.

How to serve lemon bars?

We like to dust ours with powdered sugar but a dollop of whipped topping or ice cream is also delightful. Garnish with fresh berries, mint sprig, or fresh lemon zest.
