7-UP Bundt Cake With Lemon Glaze

A classic recipe for a 7-UP cake that is made from scratch and topped with a simple lemon glaze. This lemon bundt cake is a moist dessert with a sweet citrus taste to it.

This refreshing citrus flavored cake is ideal for the summer months but can easily be enjoyed all year long.

Not only can 7-UP help relieve the occasional upset stomach but it acts like baking soda in many recipes like this one. The lemon-lime flavor of the soda adds a nice citrus flavor to this moist dessert.

This is the perfect dessert that would be a great recipe to bring to any family gathering, especially on Easter.

The lemon flavor of the cake, as well as the lemon glaze, just says Spring to me.

Here are the tools you will need to make this simple recipe.

  • bundt cake pan
  • 2~mixing bowls
  • measuring spoons
  • measuring cups both liquid and dry
  • hand mixer or stand mixer
  • rubber spatula
  • Baking Spray

Learn How To Make A 7-UP Cake From Scratch

The ingredients that are needed to make this cake are quite simple. All you need is melted butter, sugar, eggs, lemon juice, vanilla extract, flour, and 7-UP.

In a large mixing bowl or the bowl to your stand mixer. Add melted butter and sugar then mix until the two are combined.

Add the eggs into the melted butter mixture and mix until the eggs are combined. Make sure the melted butter isn't to warm or the eggs could scramble.

Beat in the lemon juice and vanilla extract. Slowly add the flour into the cake batter until all the flour is mixed in. I do recommend mixing on low so the flour doesn't go all over the place. In Baker's Dozen, I have some more great baking tips that you may find useful.

Once you have all the flour into the dessert batter, add the 7-UP and mix until the batter is smooth.

You can use a rubber spatula to scrape the side of the bowl to make sure all the batter is mixed together.

How Long To Bake For?

Now that all the ingredients are mixed together, pour the batter into your favorite bundt pan that has been sprayed with cooking spray.

Place into a 350℉ preheated oven and bake for 60 minutes or until done. To check for doneness insert a toothpick into the center of the cake. If the toothpick comes out clean then it's done.

You will want to let the dessert cool for about 10 minutes before removing it from the pan. If it's too warm you can risk the cake slitting in half.

How To Make A Lemon Glaze

To make this easy glaze the ingredients needed are powdered sugar, 7-Up, grated lemon zest (optional), and lemon or lime juice. Fresh lime or lemon juice would bring a fresh taste to this glaze. I'm all about working with what I have so lemon or lime juice from concentrate will work.

The lemon glaze for this dessert is very simple to make. Place the powdered sugar into a medium-size bowl. Add the lemon or lime juice, 7-UP, and lemon zest if you choose to.

7-Up being adding to the frosting mixture.

I have tried this glaze with both the lime juice and the lemon zest, I prefer just using the lemon juice and no zest. With the lime juice, the glaze was too bitter.

Mix all the ingredients together until the frosting is smooth. Now that the frosting is made and the cake has had time to cool. It's time to flip the bundt pan onto a stand.

Place the stand on top of the bundt pan and flip them both over at once. The cake should slide right out of the pan.

Pour the lemon glaze over the cooled pound cake and let sit until the frosting has had time to set up. Then cut yourself a nice slice of this 7-Up cake with lemon glaze to enjoy.

Ingredients

Cake Batter

  • 1 ½ Cups Melted Butter
  • 3 Cups Sugar
  • 5 Large Eggs
  • 2 Tablespoons Lemon Juice or lime juice
  • 1 Teaspoon Vanilla Extract
  • 3 Cups Flour
  • ¾ Cups 7-UP

For The Glaze

  • 1 ½ Cups Powdered Sugar
  • 1 Tablespoon Lemon Juice or lime juice
  • 1-2 Tablespoons 7-UP
  • ½ Teaspoon Grated Lemon Zest Optional

Instructions

  1. Preheat oven to 350℉

  2. In a large mixing bowl add the melted butter and sugar. Mixing until the sugar is desolved into the butter.

  3. Add the eggs into the melted butter mixture and mix.

  4. Beat in the lemon juice and vanilla extract.

  5. Slowly add the flour until all is is combine into the batter.

  6. Add the 7-UP and mix until all the ingredients are combined.

  7. Pour into a 9-inch bundt cake pan.

  8. Place into a 350℉ oven and bake for 60 minutes or until done.

  9. Let cool for 10 minutes before flipping onto a cake stand.

The Glaze

  1. Add the powdered sugar into a medium-size mixing bowl.

  2. Add the lemon juice, 7-UP, and the option lemon zest. Mix all these ingredents together until the glaze is smooth.

  3. Pour the glaze over the cooled cake that has been flipped out onto a cake stand.

  4. Let glaze set up before serving.

    Oh, this is interesting. I've heard of rolls made with 7-up but didn't know there was a cake recipe. I'm curious enough to give this a try. It looks pretty simple to make. Do you think it would be fine to make it in a regular baking dish instead of a bunt pan?

      I think this might be fine to do in a regular baking pan. You would have to adjust your baking time I'm sure.
